Buffalo Ranch Chex Mix

December 18, 2020 Amanda Plott

If you like standard Chex snack mix, you’ll love this spicy buffalo version even more. How do I know? My mom makes traditional Chex mix around the holidays every year, and this year is no different. But, when I made this Buffalo Ranch Chex Mix she immediately said I would need to make more and wanted to know if she could have the recipe.

There’s a whole lot of good stuff in this mix. Cereal, cheese wisps, pretzels, nuts, and a whole lot of flavor. This Chex mix is probably my new favorite. Cheesy and just spicy enough to keep you coming back for more with that delicious hotting inspired taste…

Instant Pot Tamale Bites

December 2, 2020 Amanda Plott

Ever wanted to make tamales but just weren’t completely sure how? These chicken Instant Pot Tamale Bites are not only easy to make, they are delicious and take hardly any time at all. To make these tamale bites, you do need a silicone egg bite mold, but you don’t need any corn husks at all!

You simple spread the masa dough into the silicone mole, fill, top, and cook in the pressure cooker. Yep! That’s all there is to them. I used chicken in these tamales, but you could really use any sort of shredded meat or vegetarian filling that you desire…

Air-Fryer Mac & Cheese Balls

November 11, 2020 Amanda Plott

It’s fair to say that I'm not the biggest fan of fried foods. So when my brother moved back from Colorado and offered me his air-fryer (because he didn’t like it) I was pretty excited to get to play with it. Over the last year of air-frying I have learned a few tips and tricks. There is definitely a bit of a learning curve when it comes to the air-fryer.

Not everything is great when being air-fried rather than deep dried. And that’s just the nature of it. Of course, the deep fried things tend to be more greasy, but they are also more crisp and tend to take less time. So when making these delicious Mac & Cheese Balls, my brother and I decided to have a fry off…

Blackout Brownies

October 27, 2020 Amanda Plott

A couple of weeks back I got my hands on some ‘black’ cocoa powder. It’s extra dark unsweetened dutch process cocoa powder and it is delicious! It’s a great way to get a naturally deep dark black chocolate for baked goods. Which means it’s absolutely perfect for blackout, black velvet, and Halloween sweets!

These Blackout Brownies are based off of one of my tried and true family favorite brownie recipes that’s been in my back pocket for a good while now. With Halloween looming just a few days away, I thought what better time than now to make my favorite brownies with this black cocoa powder…

Baked Buffalo Tofu Strips

October 13, 2020 Amanda Plott

Who needs chicken? These Baked Buffalo Tofu Strips are a great vegetarian alternative to the long time favorite of buffalo chicken. They’re breaded in panko and baked to perfection. That’s right, no frying needed! It’s truly one of my most favorite ways to eat tofu.

The panko seasoning is the star of the show. Tofu doesn’t have any real flavor so you have to put it with a lot of boldness to get anything out of it. That’s why I seasoned the hell out of the breading mixture. But, feel free to add more to it and adjust accordingly to your tastes. Just keep in mind that this is where the MOST of your flavor is going to come from. It should taste very spicy and very salty!…

Individual Pizza Pot Pies

October 4, 2020 Amanda Plott

Yep! Pizza in the form of a pot pie. Turned upside down into a delicious individual bowl of pizza goodness. This pizza pot pie makes it’s very own pizza crust bread bowl that is perfect for a single serving of cheesy sauce ‘deep dish’ style pizza!

The best part is that you can alter each individual pizza to have your own favorite toppings. I left the main part of these as ‘cheese pizza’ so that you can customize and add your other pizza topping favorites. I added pepperoni, mushrooms, olives, and jalapeños to mine…
