This was actually one of the first recipes that I posted here. It's been a family favorite for years and years now. Well, at least 7 years anyway! It was also one of the first real recipes that I made for my family.
I love it for how easy it is to make, but it's also one of the most delicious soups you can make, and is rather guilt free too!...
So, originally I was going to call this a 'breakfast' bowl, but then I started to realize that you could eat this for just about any meal. If you want it more 'breakfast' style you could cook the eggs scrambled or poached. For lunch? I prefer the hardboiled! Making it into dinner? Toss in some grilled chicken.
With all of that being said, I decided it was best to just call it the Mediterranean Bowl, and not label it with a specific meal type. No matter when you decided to enjoy it, it's packed with loads of nutrients and good-for-you stuff...
Ever since I got my pullet eggs last week, I've been in breakfast heaven. And since I'm getting more of them later today (while they're still in season), I wanted to use up the few that I have leftover for breakfast again today! It's not what I had planned, but Hurricane Harvey sort of threw me off my schedule that I had laid out. So, I'm just winging it here.
If you missed it last time I talked about pullet eggs, basically they are smaller eggs that are laid by chickens under a year old. They're richer and have bigger yolks than eggs laid by older and more mature hens. So, when I find them for sale I always buy them while I can...
Well, we survived the wrath of Hurricane Harvey this past weekend here in Austin Texas. There were moments when I thought I would need an ark to get my daughter to school today, but that wasn't the case. Thankfully for us here, the rain was moderate and just light enough to continue absorbing into the ground and finding it's way to the overflows. The wind was the worst of it and is still going stronger than I would like. I'm fortunate though and know that not everyone in Texas was nearly as lucky. My heart goes out to all effected but this record setting giant.
Even though our power only went out very briefly here, the lighting (or lacking of) outside all weekend is what ultimately kept me from being able to get a new recipe out. So today, I'm back at it with the sky being perfectly bright and overcast for great natural lighting!...

I can hardly believe that yesterday was the first day of my daughter going to second grade! Time just flies these days, even more so when it's time for back-to-school. It's a chaotic and unforgiving time of the year for any parent. That's why I'm all about simple meal solutions right now. We made it! I finally got back from our end of the summer spur of the moment vacation road trip across two states with just myself, my mom, and my little girl. It was a blast!
