Pumpkin & Sausage Queso

Not all queso is created equal. Although, I don’t think that I could ever turn a queso away. This Pumpkin & Sausage Queso is PERFECT for Fall. It’s loaded with a little bit of pumpkin flavor and a lot of warm spices and a real kick-in-the pants! Naturally, while it’s hatch chile season in Texas, I served mine with some green chile hatch tortilla chips and YUM.

This queso is a bit more on the extra spicy side, what with the added chipotle, spicy sausage, and of course peppers as far as the eye can see…

Whole Wheat Pumpkin Pie Spice Waffles

I'm so ready to get below 90 degrees F. for the first time this season. It's time for the end of summer now as as I’m concerned. One of my favorite things about fall has to be pumpkin. Pumpkin this, pumpkin that, pumpkin everything!

Today I'm hoping to entice the start of fall with these lovely whole wheat pumpkin pie spice waffles, and man... they are truly something worth waking up for. They are full of pumpkin flavor and the added warm spices that go along with a traditional pumpkin pie. Cherry Pie Cookies

These cherry pie cookies combine two favorites. Cherry pie and cookies! They’re super simple to make with less than 5 ingredients and are super adorable! They’re basically mini individual hand pies that look like pies and yet are shaped like cookies. They make for an impressive dessert, even though they’re so simple.

There isn’t a whole lot that can be done to make these better-for-you other than using a lighter pie filling. You could even make your own pie filling and use that, but today I was keeping it simple so I personally opted out of that option…

Funfetti Sugar Cookie Cake

My daughter’s birthday is literally just around the corner. I can’t believe I’m about to have an 11 year old. Even so, I’m doing my very best to take this birthday extra special since, well, times are still rather strange in the world. One of the things I’m doing to make her day even more magical is making cake! Okay, so… not cake-cake. She had pretty specific instructions on wanting a cookie cake again this year. Which I’m totally down for.

Guinness Oat Bread

This Guinness Oat Bread is a favorite around here, with a full 12 ounces of beer baked right in, this bread is a real crowd pleaser. Even though St. Patricks day has passed, I’m still over here using up Guinness. One of my favorite things to do with beer (since I don’t drink it myself) is to use it in cooking, and more specifically, in baked goods.

I don’t think I’ve ever used a whole bottle of beer in bread before though. The stout gives this bread a beautiful golden hue and just enough beer taste to let you know it’s there without overwhelming you. The best part about this bread though, is that it’s sweet enough to be a part of breakfast, and savor enough to be a part of lunch or dinner!…

Carrot Cake Bread

I’m not going to lie, I’m excited and yet a little apprehensive about Spring this year. Last year about this time is when the whole world went to shit.
