Cherry Pie Cookies

These cherry pie cookies combine two favorites. Cherry pie and cookies! They’re super simple to make with less than 5 ingredients and are super adorable! They’re basically mini individual hand pies that look like pies and yet are shaped like cookies. They make for an impressive dessert, even though they’re so simple.

There isn’t a whole lot that can be done to make these better-for-you other than using a lighter pie filling. You could even make your own pie filling and use that, but today I was keeping it simple so I personally opted out of that option.

You could really use any flavor of pie filling that you’d like to here. Cherry is a classic and one of my favorites though, so that’s why I went with it. making the lattice tops to the cookies is truly the hardest part of making these cookies, and even that isn’t too difficult.

I wove the dough strips and then pressed them together just enough so that the lattice would stay together once cut out with the cookie cutter.

Delicious little cookies that combine cherry pie and cookies together to make one perfect bite that's the best of both worlds!

Ingredients

  • 2 Refrigerated Pie Crusts (14 Oz. Dough)
  • 1 C. Light Cherry Pie Filling
  • 1 Whole Large Egg
  • 1 Tbsp. Sugar

Instructions

  1. Preheat the oven to 350 degrees F. and line a baking sheet with parchment paper or silicone baking mat; set aside.
  2. Scoop the 1 C. cherry pie filling out onto a cutting board and chop it up a bit smaller.
  3. Roll out the crusts and use a 3" round cutter to cut 12 cookie bottoms out.
  4. Transfer each to the prepared cookie sheet.
  5. Top each with about 1 Tbsp. of the cherry pie filling.
  6. Cut the other pie crust into 1/2" strips and create your lattice.
  7. Use the same 3" cookie cutter to cut out the lattice tops for each cookie.
  8. Place the lattice piece over the cherry pie filling and seal the edges as you would a pie.
  9. Brush the tops of each with the egg and sprinkle with sugar.
  10. Place in the oven to bake for 20-25 minutes or until golden brown.
  11. Once done, remove from the oven and allow to cool completely.
