Skinny Cherry Pie Bars

These cherry pie bars are easy as pie (insert chuckle here) and just flat out amazing! With less than 140 calories in a nicely sized square... how can you deny yourself such bliss?

I really can't wait to try out another flavor or maybe even use some fresh fruit for the filling.

Back when I originally made these Skinny Cherry Pie Bars, my mom was telling me that she was surprised that I hadn't posted a pie yet. That got me thinking...

I kept seeing this amazing pin floating around Pinterest, but I just wasn't sure that any of my usual tricks for lightening up baked treats would work.

Thankfully, I was successful!​ The reward was outstanding.​ Mmm...

Skinny Cherry Pie Bars

Cherry pie and dessert bars come together to have two of your favorites in one! Lightened up, and still soooo tasty.

Ingredients

Bars
  • 1/4 C. Butter
  • ​1/4 C. Natural Sweetener
  • ​1/4 C. Brown Sugar/Sweetener Blend
  • ​2 Egg Whites
  • ​1/4 Tsp. Vanilla Extract
  • ​Drop Almond Extract
  • ​1/2 C. Flour
  • ​1/4 C White Whole Wheat Flour
  • ​1/4 Tsp. Salt
  • 1 1/2 C. Light Cherry Pie Filling
Glaze
  • ​1 Tbsp. Plain Fat Free Greek Yogurt
  • ​2 Tbsp. Powdered Sugar
  • ​Drop of Vanilla Extract
  • ​Drop of Almond Extract

Instructions

Bars
  1. Preheat oven to 350 degrees F. Light coat a 9x9 or 8x8 square baking pan with non-stick cooking spray.
  2. In a large bowl, beat together 1/4 C. Butter, ​1/4 C. Natural Sweetener, ​and 1/4 C. Brown Sugar/Sweetener Blend, until creamy.
  3. Add in the ​2 Egg Whites, ​1/4 Tsp. Vanilla Extract and ​Drop Almond Extract; stir until combined.
  4. In a separate bowl stir together the ​1/2 C. Flour, 1/4 C. White Whole Wheat Flour, and 1/4 Tsp. Salt until well blended.
  5. Add the flour mixture to the butter and sugar mixture; stir until just combined.
  6. Spread 3/4 of the mixture evenly into the bottom of the prepared pan.
  7. Top with the cherry pie filling.
  8. Drop the remaining batter over the cherry pie filling somewhat evenly but still random. My drops varied in size anywhere between about a nickel and a quarter.
  9. Bake for 35-45 minutes or until the dough on top is done.
  10. Remove the bars from the oven to cool.
Glaze
  1. While the bars are cooling, combine the ​1 Tbsp. Plain Fat Free Greek Yogurt, 2 Tbsp. Powdered Sugar, Drop of Vanilla Extract, and Drop of Almond Extract in a small bowl.
  2. Once the bars have cooled, drizzle the glaze over the top and divide into 9 equal square pieces and serve warm.
