So while I’m currently out of town on a little mini vacation, it was taco Tuesday before I left. And with things being more than a little crazy around my place, I decided to take the easy route when it came to dinner. Tacos are a staple in our house and well… we stay pretty true to taco Tuesday. I like to shake things up a bit when it comes to tacos. While I LOVE traditional beef tacos, I also like to play around with chicken tacos, vegetarian tacos, etc.

This time around, I went with some verde chicken tacos. And added some of my FAVORITE creamy jalapeño ranch sauce. To make them even more appealing, I had the chicken cook in the instant pot for a dinner that can be made in well under an hour…

Naked Chicken Chile Relleno

Once again, it’s time to get naked y’all! Or… at least ditch the batter and frying with this NAKED Chicken Chile Relleno! Alright - so a few weeks back now, we actually went OUT and ate dinner somewhere. Can you even imagine? At least I’d like to think that it’s obvious that 90% of the food in this house is cooked in my very own kitchen. Occasionally though, I like to take a night off.

This one night in particular, we went to one of my favorite places. A local modern tex-mex influenced place where they put a modern (and usually healthy) twist on their food. Skinny Green Chile Chicken Enchilada Dip

Sometimes, you just feel like having snacks and appetizer style things for dinner. Or maybe that's just me and my family? This weekend has been a rainy one, and I'm not about to complain about that. We've been needing the rain and the cool off from the blaring Texas sun. Even so! With being stuck indoors and games and movies being the fun of the weekend, I thought it would be perfect for an appetizer night.

For whatever reason, rain always leaves me craving Mexican food. Namely enchiladas. That's why I went with this Skinny Green Chile Chicken Enchilada Dip as part of our rainy day spread. This dip tastes just like those famous cream cheese chiclen enchladas that we all know and love. The only difference is that this dip is guilt-free!

Instant Pot Green Chile Pork Verde

While it's been warming up here in Texas, for the past few days the skies have finally decided to open up and give us a much-needed downpour of rain. It's perfect timing too as the bluebonnets and other wildflowers have just begun to pop up, and now we'll likely get even more!

I had some leftover tamales that I stored in my freezer a week or so ago, and I was wanting something warm to pair them with that wasn't chili. I'm a little burned out on beans lately. Gasp! No, no. Just meat and vegetables here. Somewhere in the midst of racking my brain, I remembered this Mexican style stew that they serve up at one of the favorite local Mexican places here in Austin. The name is debatable. It's called 'green chile verde' because it's made with green chiles. Not because it comes out green in the end result. Generally, pork chile verde is a slow simmered pork that's stewed in hatch green chiles...

Mango Chile Lime Popsicles (Paletas)

A couple of months ago I was out at Eeyore's birthday here in Austin.

Yes... we celebrate Eeyore's birthday here. It's quite a thing, actually.

Anyway! It was pretty warm out that day and there was a vendor selling some rather interesting sounding homemade organic local popsicles. One of the flavors on the list was a mango chile flavor.

Of course, that's the one that I ordered! Unfortunately, they were all sold out. Ergh!

Well, it sounded easy enough. I've made my share of popsicles in the past so I thought I'd try my hand at this mango chile one too!
