Ah! Today is the first day of first grade for my little girl, and there is definitely a big difference between dropping her off today and dropping her off for her first day of kindergarten. I think every mommy in the world knows exactly what I'm talking about too. What can I say? It was an exceptionally long and drawn out summer.

Skinny 'Leftover' Turkey Salad

I decided to get a bit ahead of the game this year with whipping up some yummy ideas on how to use up all those leftovers. And believe me... I love Thanksgiving leftovers. In some cases, it's better than the actual Thanksgiving dinner! But, I tend to like reusing them in a clever and different way than just always reheating and eating.

Apple Cinnamon Detox Water

So, I've been working out for about two weeks now, about three days a week. I gotta say, I've been feeling pretty good already! I'm all for getting lean this year. The place that I go for my classes offers ice water and also fruit or vegetable infused water. The water recipe changes daily. So far, I've noticed a lemon water, cucumber lemon mint water, lemon cantaloupe water, and a fresh berry water. They've all been delicious and perfect to drink before, during, and after a good workout.

Needless to say, the notion of the infused water got my wheels spinning once again on my healthy detox waters. I've made a few of these waters in the past, all of which I've loved. I'm an avid water drinker, outside of my morning cup of joe I'm a water all day sort of girl and I always have been!

Healthified Pork Skewers "Faux Ribs"

Is it bad of me to tell you that even as a Texan... I can't stand to eat meat off the bone? I'm a white meat only (no dark meat here) and boneless kind of girl. I always have been for as long as I can possibly remember. That's right. I don't care for ribs on the bone, wings (or legs) on the bone, or even steak on the bone! No bones.

I've said it before, I could very easily become a vegetarian without skipping a beat. In fact, I've found that eating meatless dinners 2-3 days of the week slash my grocery bill and helps me to feel better overall. That being said, I am a Texan and barbecue is a weekly requirement as well!

Since I'm a boneless fan, skewers are sort my go-to for faux ribs. It gives me that raw carnivore feel while not grossing me out in the process. Plus, I get to use a leaner cut of meat for my 'ribs' - which meals less calories and less guilt...

Chia seeds are full of health benefits. These amazing little seeds slow digestion, help prevent spikes in blood sugar for diabetics, are full of fiber, omega-3, calcium, manganese, protein, and so much more. They also help you feel fuller faster.

I use chia seeds in many things. I put them in a Chia Fresca to drink almost every day, and even use them in one of my favorite salad dressings! I've been wanting to make a chia pudding for a long while now, but somehow the timing just never quite worked out right...

Skinny Apple & Gorgonzola Pizza

We love pizza around here. Seriously it's a staple in our meal plan. I think we have it about once a week in this house. At least. I'd love to blame that on my little girl, but what can I say? I love pizza too. Always have, and always will.

While she is a traditionalist, sticking to her cheese pizza with extra sauce for dipping... I like to experiment and try out new things on mine. Some things work. Others flop...
