5 Ingredient Skinny Summer Vegetable Dip

It's getting warm here in Texas, though I'll be the first one to say that so far we've had a perfectly mild summer. Usually by now we are well into 100+ degrees days, and so far we've barely broken past the 90's. No, that's not a complaint either! It's these perfect summer days that I love to spend out in my backyard entertaining. Whether that means my little family or the whole lot of us.

No matter who's around, it's always about 'what to eat' and this 5 Ingredient Skinner Summer Vegetable Dip is the perfect spread! I've loaded this dip up with bell pepper, jalapeño (for taste - not heat), sweet summer corn, and olives! I know, bare with me, it might sound like a rather creative and interesting combination... and it is! It's completely amazing and full of flavor. You'll fall in love from the first taste...

Healthified Crock Pot Beef & Broccoli

So, as you can see I'm busy blowing the dust off of some of my older and more popular dishes. I've been making minor changes and updating pictures along the way as I've needed to. Of course, Beef and broccoli is one of those things that is always a crowd pleaser. It's certainly one of my favorite asian dishes!

That being said, it's likely that a serving of it at your favorite local restaurant will cost you a good 600+ calories, a lot of sugar, and even more sodium. Yikes!  No thanks...

Pumpkin & Black Bean Soup

I'm putting pumpkin in everything while I can since it's 'seasonable' for the next couple of months. I love fall for many reasons, but pumpkin has to be pretty close to the top of the list! In my opinion, there just isn't too much that you can't put pumpkin in; drinks, desserts, entrees... You name it, and I've probably already thought of a way to put pumpkin in it, if I haven't already put pumpkin in it before - that is!

This pumpkin soup is pretty great. I'd compare the consistency of it to a creamy tomato soup. In fact, it's color and texture are pretty much the same too but a lot more soft and calm with it's flavors since tomato soup has the zing of acidity....

Skinny Italian Stuffed Peppers (Crock Pot)

I've had a few stuffed peppers in the past. When I was younger, I remember my mom making some spanish style stuffed peppers that I thought were pretty good even though at the time I wasn't a huge pepper fan.

Oh, how times have changed.

These stuffed peppers are pretty amazing and ridiculously easy to do. With around 10-15 minutes of preparation, you can have these babies set to cook through the day in your crock pot with hardly any fuss at all!...

Stuffed Breakfast Peppers

I've made Baked Egg and Avocado Bowls before, which are amazing, but I am also a fan of stuffed peppers. So, I figured... why not use the same idea and stuff peppers as a healthy low cab breakfast option? Of course!

These peppers are super easy to toss together and taste great. I was a little surprised with how filling and satisfying these were. I'm generally a carbivore in the morning.

Yes. That's right. A carbivore.

You know, similar to a carnivore... but with carbs rather than meat.

Skinny Cheesy Green Chile Sausage Gravy

A few words that you don't normally see in a description together? Skinny, cheesy, and gravy. But, somehow I've managed to pull it off. This gravy is so full of vegetables and lean sausage that you can absolutely afford the cheese that's in there.

Seriously. This stuff is pretty addicting.
