Naked Summer Burger Bowls

Y'all! It's been so busy around here ever since my daughter got out for summer. I mean... yikes! The day after my little one got out of school, we took a quick overnight trip a couple of hours away to see my mom and hang out at the drive in movie theater there near her place. It was so much fun and a great way to kick off summer vacation! Today though? It's back to reality and the real world.

Healthified Meatloaf Cupcakes & Cauliflower Mash

It's been a super long time since I made these Meatloaf Cupcakes. As in... years. A lot has changed since then, especially my tastes and cooking style. The very first time that I made these, they were in the traditional manner. Plain old ground beef and mashed potatoes. Nothing fancy. Nothing 'healthified'.

Today though, I've lightened these up and made them a little more wholesome by adding in some veggies like carrots, and zucchini too! I also used an extra lean ground beef which I kept moist and full of flavor by adding in an egg and reduced sugar ketchup. The vegges also help to keep the lean meat from drying out. Of course, I also used a cauliflower mash instead of straight up mashed potatoes to get even more vegetable goodness in there.

These are packed. PACKED. Loaded up entirely with vegetables, and the best part is that you would never guess it!...

We're almost to the middle of the week, and if you're anything like me the craziness is only just starting to settle in! I know that it can sometimes be a struggle to make the right decisions for a more wholesome dinner option when in the chaos of the week. That's why I like to plan ahead with my weekly menu planner and shopping list. Another thing I do is keep my pantry and fridge stocked with staples that I know, love, and trust.

Crock Pot Corned Beef & Cabbage

I love corned beef and cabbage. I really don't know why I don't make it more often. This year, I decided to get a little ahead of the St. Patrick's Day celebrations to update the photos here from the recipe that I originally posted here back in 2013. I've had a lot of fun lately as I've started to go back and edit some of my older favorites; cleaning them up and reorganizing it all.

I'm an Irish girl (my dad's a full on red-head), so it's probably no surprise that I love corned beef. That being said, I think the first time I ever had it was sometime during my high school or college years. It's a really great meal to make anytime, but especially in March as we get closer to St. Patricks' Day!...

Skinny Italian Beef Sandwiches

Oh, man... the history behind this recipe dates back around 6 years ago. It was right around the time that my daughter was born when I first started to make it. This was one of the first real things that I cooked for my family, and it is also one of the things they still ask me to make. Yep. Even to this very day! The recipe originated on a website that sadly is no longer around. The same website that started me off on my better-for-you cooking style.

Originally the recipe called for the beef be cooked in the slow cooker, but today it was a little chilly and I felt like blowing the dust off of my oven for the coming cold-weather season. Yay! I'm finally getting to use my oven again. Thank. Goodness. It's about time!...

Healthified Juicy Lucy Burgers

They say that a picture is worth a thousand words, so... I'll just leave this right here for a moment and let you take all of this glorious golden cheese amazingness in.

When I decided to try my hand at making a Juicy Lucy burger this week, I've got to admit, I was a little nervous! The last time that I attempted making a Juicy Lucy was with my dad grilling them up, and let's just say they didn't turn out as planned. Not at all.

The cheese completely disappeared out into the burger meat and/or oozed out in a sad waste. Leaving us with just plain old burger patties. How boring! It was cheese abuse at it's finest. So much cheese was lost that day... may it rest in peace. Today though, that wasn't the case. I was determined to have my Juicy Lucy, and eat it too with all of it's amazing cheese goodness tucked away inside where it's supposed to be...
