I'm tired, y'all. It's the last few weeks of school until summer break and I am dragging my booty just as much (if not more) than my sweet little girl. I'm tired and the struggle to eat real food couldn't be any greater. It's so easy to talk yourself out of eating the right things, the good things, the healthier things. I have found one way to make it easier to not fall into that trap though, and that's by following the K.I.S.S. method.

Portobello Pizzas

We are a houseful of pizza fiends, y'all. I'm pretty sure that we collectively eat pizza in some form or another at least once a week. My almost 8 year old nearly demands it. Pizza has always and will always be a part of our regular rotation here. So, sometimes I have to get pretty creative when it comes to my pizza.

What can I say? I just don't need all those carbs at this point in my life. My body is craving veggies. All the veggies too. This time around, I decided to try my hand at a portobello crusted pizza. And I must say... I was not at all disappointed!...

Low-Carb Chicken 'Nachos' (Keto-Friendly)

With the Big Game coming up tomorrow I thought I needed to get another good game day recipe out. These Low-Carb Chicken 'Nachos' have been something that I've been working on for a month or two now, trying to get the spice level right and the cooking method down perfectly.

These Chicken 'Nachos' are really more of Chicken 'Not-Chos' since there is no chip involved here. Instead, the entire nacho is based on the pieces of chicken themselves. To pack in as much flavor as possible, I started these off with seasoning. A LOT of seasoning too. Let's face it, chicken breast can be a little moot. So, I wanted to be sure it had all the help that it could get here...
