Halloumi Bake

I used to be a rather picky eater. In fact, I was such a picky eater growing up that my mom and dad had to tell me that beef came from a 'beef tree' so that I would eat it. As I've gotten older, my tastes have changed. My mind has expanded. And my pallet continues to get more and more educated. That isn't to say that my mouth is snobby, just that I'm far more open to new things.

Take goat cheese for instance. I'm an avid cheese lover, and I've never met a cheese I didn't like, but I have often found myself questioning and unsure of goat cheese for some reason. Maybe I secretly deep down don't like goats? Whatever the reason, I try try try my best to stick it through, and when I do... I love goat cheese! So what's halloumi anyway? Well, it's goat cheese. Happy belated St. Patrick's Day, y'all! Of course, I couldn't leave you all weekend without getting these Guinness Meatballs out here for everyone to enjoy. And now... what's a girl supposed to do with leftover beer? Especially an Irish Stout?

Healthified Guinness BBQ Sauce

I had originally created this BBQ sauce waaay back in 2013 and with St. Patrick's Day just around the corner, I thought it was high time to make the recipe once again and retake some of the pictures. When making the recipe this time around, I only made 2 minor changes to it, but other than that I stuck pretty much entirely to the original.

This Healthified Guinness BBQ Sauce can be used for a plethora of things, including pulled pork, burgers, or pretty much anything else you'd use any BBQ sauce on; this will just add a little bit of an Irish or Guinness twist!...

Many years ago I started making my own spaghetti sauce. Don't get me wrong, jarred spaghetti sauce has it's place and time in my life too. But, when given the option, I will always prefer making my own. I've made several types and kind. I love pasta every bit as the next girl. But, there's always something about it that leaves me feeling a wee bit guilty. Maybe it's something to do with the fact that most pasta dishes are loaded with carbs and not usually the most veggie-forward meal option.
