There's a great debate somewhere out there in this world of ours on whether chili should have beans in it or not. Is it 'technically' chili with or without beans? {Shrug} Who knows? ...Now, being a native Texan... I've got my own opinions on the matter. And I can honestly say that any chili I've ever been served before has always had beans in it.

Club Sub in a Tub

So, back when I was in high school, my parents had a boat. It wasn't a big boat or an expensive boat. Just an old clunker of a boat. In fact, it ended up sinking. At the dock. ...And almost with my grandmother on it too! ...Even so, our family had a lot of great fun and adventures on that boat. Many a summer night and day were spent out there on the water, together, as a family. It's truly some of my fondest memories.

Talk about a twist on classics, y'all! Today I've combined two of my most favorite things together; spicy thai peanut dressing and burgers! I know it sounds crazy, but just hear me out. These burgers are wholesome, full of flavor, and so juicy. They are perfect for summer cookouts, being light enough not to weigh you down with any richness.

This is definitely a more refreshing burger with the cool crisp slaw, and yet is still filling enough to satisfy even the most empty of tummies. The secret? It's in the sauce! I used to be a rather picky eater. In fact, I was such a picky eater growing up that my mom and dad had to tell me that beef came from a 'beef tree' so that I would eat it. As I've gotten older, my tastes have changed. My mind has expanded. And my pallet continues to get more and more educated. That isn't to say that my mouth is snobby, just that I'm far more open to new things.

Take goat cheese for instance. I'm an avid cheese lover, and I've never met a cheese I didn't like, but I have often found myself questioning and unsure of goat cheese for some reason. Maybe I secretly deep down don't like goats? Whatever the reason, I try try try my best to stick it through, and when I do... I love goat cheese! So what's halloumi anyway? Well, it's goat cheese. Naked California Club 'Sandwich'

A good long while back I was introduced to the 'Unwich' which is a sandwich... minus the bread and wrapped up in lettuce instead; keeping it a handheld portable sandwich style meal without the most of the carbs or the guilt. That's right, we're stripping the sandwich down to the nitty-gritty and I promise you'll thank me later for it.

One of my all-time favorite sandwiches is and always will be a club sandwich. So, that's my go-to for this naked unwich today. Who needs the bread anyway? I'm getting to keep all my favorite parts; bacon, turkey, cheese, and even avocado!...

Healthified Turkey Lettuce Wraps

So, here's the thing... I've been making these for a few years now. Lettuce wraps are one of my favorite things to order from P.F. Changs or Pei Wei, mostly because they are sooo delicious and I don't feel quite as guilty eating them as other options on the menu at either place.
