Shakshuka (Eggs in Purgatory)

I've heard a lot over the past year or two about 'Eggs in Purgatory' or 'Shakshuka'. In fact, I've had several variations of Shashuka recipe ideas saved for a good long while now. I think I finally decided it was time to take a swing at it when I saw it featured once again on one of my favorite foodie shows - Parts Unknown with Anthony Bourdain.

Spring is upon us here in Austin Texas, which for me means entertaining friends and family... and also means it's time for deviled eggs. Not just any deviled eggs though, we're talking fully loaded in a way that I never really thought of before. Somehow last night ended up being an impromptu wine and cheese night. I think it's because I needed a good excuse to crack open a nice bottle of red. Long story short, I woke up this morning to a fridge stocked with leftover cheeses. With having 'sweet' for breakfast for a few days now, I decided it was time to switch it up and make a nice savory bite for myself.
