Tomato Galette

It’s the middle of Summer and tomatoes are a plenty! I got my hands on a WHOLE LOT of home grown tomatoes from family less than a week ago so I decided to use them up in a lot of ways this week. Now, one of my favorite things to do with tomatoes is to make a tomato pie, but today I decided to go a little fancy with this Tomato Galette!

With the Holidays on our heels, we could all use a good, easy, simple recipe to have on hand as an appetizer. Let’s face it, sometimes the family gets hungry before the main meal is done, and these Goat Cheese & Pomegranate Tartlets are just that.

Small bite sized mini tarts that are filled with goat cheese and honey before being baked and topped off with crushed rosemary and fresh pomegranate seeds. Skinny Mushroom & Asparagus Omelette

I’ve got to be honest. I’ve been skipping out on breakfast for a while now. With school starting back up after the winter break and a terrible head cold running rampant through the house… There just hasn’t been enough time in the day to fuss with breakfast. And the whole point of breakfast is just that… to break-the-fast of the night of sleeping.

They don’t say that breakfast is the most important meal of the day for no reason. It’s there to start your day off and get you in gear for the rest of the day. Trust me when I say that being ‘hangry’ is a real thing. Finally, I made plans this week to stick to my guns and be SURE that I started my day off right with actually eating breakfast again….

Rustica Salad

Well, I guess I spoke too soon about the weather cooling off. It’s been cooler, yes… but we’ve still gotten well up into the 80’s for a couple of days this week. It’s been nice for the most part, crips mornings, warm days, and cool evenings to follow. And while I’m completely set on Fall and Winter meals now, I still needed to toss in a light salad into the mix this week.

I’m calling this the ‘rustica salad’ because that’s the name of the salad that I got the idea for this one from. Of course, I had to put my own spin on it with a homemade dressing and plenty of toppings. The homemade Skinny Balsamic Vinaigrette is one of my favorites. Beet Tartare Stacker Salad

Okay, but for real... I had no idea what to call this. Beets have been a big part of my meal plans lately, and that's mostly because I've gotten them for a few weeks in a row now in my local farm-to-table box. And let me just say, I am a huge beet fan. My mom, however? She thought she only liked pickled beets. (Because that's the only way she's ever had them.)

So while she's been hanging around my place I've now managed to convert her by way of a beet pesto pizza and also that Winter Citrus Power Breakfast from earlier this week. One of these days she'll learn to trust me and my food! One of these days...

Somehow last night ended up being an impromptu wine and cheese night. I think it's because I needed a good excuse to crack open a nice bottle of red. Long story short, I woke up this morning to a fridge stocked with leftover cheeses. With having 'sweet' for breakfast for a few days now, I decided it was time to switch it up and make a nice savory bite for myself.

Since I also had some homemade pesto leftover, I thought the cheese and the pesto would be a great pair to make an Omelettata with. And Omelettata? Well, it's not quite an omelet and not quite a frittata. It's somewhere in the blissful middle of the two...
