Breakfast does not have to be a chore. This Tater Tot Breakfast Bake is quick to toss together and pretty much does it's own thing while baking in the oven. Giving you plenty of time to do other important things. You know... like settling into your back-to-school routine. One of the best parts about this breakfast casserole though, is that it can be made ahead and popped in the oven any time.

Being as it makes a rather decent sized pan of it, you could probably enjoy this all week long with a quick reheat in the morning to enjoy it again. This is a pretty hearty and filling breakfast too. There's layers of sausage, egg, cheese, potatoes and yes... even some bacon!…

I used to be a rather picky eater. In fact, I was such a picky eater growing up that my mom and dad had to tell me that beef came from a 'beef tree' so that I would eat it. As I've gotten older, my tastes have changed. My mind has expanded. And my pallet continues to get more and more educated. That isn't to say that my mouth is snobby, just that I'm far more open to new things.

Take goat cheese for instance. I'm an avid cheese lover, and I've never met a cheese I didn't like, but I have often found myself questioning and unsure of goat cheese for some reason. Maybe I secretly deep down don't like goats? Whatever the reason, I try try try my best to stick it through, and when I do... I love goat cheese! So what's halloumi anyway? Well, it's goat cheese. Just because the holidays are over doesn't mean that the entertaining has stopped. At least, that's how it is around my place. I like to think of my house as the central hub. The neutral territory. THE place to be. At least once a week there is something going on and I've got a house full of people.

My daughter and I are usually outnumbered by the boys too. Even when my mom comes to visit, if you're counting the animals, we're still outnumbered by at least 2 to 1. Okay, so there really isn't enough good things that I can say about this soup. I actually made my first attempt at this soup a few years ago. Long before I originally posted it here. My in-laws were in town and I knew that this soup from a well-known restaurant happened to be one of my father-in-laws' favorites. Since he's a health-conscious individual such as myself, I thought it would be fun to try my hand at making a healthier version of it for him.

I hadn't had the soup before, so I couldn't say at the time if it was anything similar to the one that he was used to, but he did have a couple of bowls of it for dinner! Me? I was anything but a fan. Why? One word. Kale.
