Once upon a time, I had a bread maker. I used it pretty often, but eventually it gave out and started to give me fits. So. The era of fresh homemade bread in my house ceased since, as I’ve said before, baking tends to scare me. Alas… with Fall in full effect and Winter just around the corner, I thought… I’d try my hand.

Minestrone (Instant Pot)

Yeah, so... I might be on vacation, but that doesn't stop this work engine from running. I really wanted to get at least one recipe out during the week of my being gone. So whilst in the midst of packing and sorting and getting ready, I was also busy in the kitchen. Okay. Not really busy. This Minestrone soup is delicious, simple, tradtional, and couldn't be any more quick or easy to make.

One of my favorite things about this soup, is that it's a great way to use up leftovers from the fridge or pantry. Any of the vegetables or noodles or beans can be swapped out for nearly any alternative that you might have on hand…

Halloumi Bake

I used to be a rather picky eater. In fact, I was such a picky eater growing up that my mom and dad had to tell me that beef came from a 'beef tree' so that I would eat it. As I've gotten older, my tastes have changed. My mind has expanded. And my pallet continues to get more and more educated. That isn't to say that my mouth is snobby, just that I'm far more open to new things.

Take goat cheese for instance. I'm an avid cheese lover, and I've never met a cheese I didn't like, but I have often found myself questioning and unsure of goat cheese for some reason. Maybe I secretly deep down don't like goats? Whatever the reason, I try try try my best to stick it through, and when I do... I love goat cheese! So what's halloumi anyway? Well, it's goat cheese. Spring Chicken Soup

I may not be a spring chicken anymore, but this soup sure is! Just because it's Springtime, doesn't mean that we have to quit eating soup. Let's face it, sometimes you just want a good meal in a bowl to warm your soul, and that's what this soup is meant for! Even if it is warming up outside.

I'm going to hold onto Spring for as long as I can and go kicking and screaming into the hot blazes of another Texas summer. The, at least, 4 months of the year where my air conditioner is running constantly on full and the air outside is almost so hot that it burns your lungs when you breathe. Ughhh... No, thank you! I'll just sit here and enjoy the Spring weather while I can. Soak ever ounce of it up...

Many years ago I started making my own spaghetti sauce. Don't get me wrong, jarred spaghetti sauce has it's place and time in my life too. Baked Eggs in a Zucchini Nest

Wakey-wakey eggs and bakey! This mornings breakfast is brought to you by, leftovers! Okay, maybe not exactly leftovers but an accumulation of things that I indeed had leftover in my fridge that went unused through the week in some way shape or form.

For instance, the original plan for the spiralized zucchini was for zoodles in a vegan Pho. The same goes for the mushrooms. I'm not entirely sure why the tomatoes were untouched, but somehow everything always works out in the end. Just like these Baked Eggs in a Zucchini Nest!...
