Skinny Wildberry 'Toaster Strudel' Pie

This past week I played around a lot in the kitchen and made things fun by turning ‘kid classics’ into sweet treats that kids and adults alike will enjoy. Skinny ‘Homer Simpson’ Donuts to Skinny Strawberry Pop-Tart Cobbler. Another of my favorites from my childhood was Toaster Strudels. And being as I had some phyllo dough in the freezer that needed to be used up, I decided to make a Toaster Strudel Pie.

My favorite flavor of both Pop-Tarts and Toaster Strudel was always ‘wildberry’. Something about the perfect mix of sweet and tang in there. This is obviously not your average pie and it’s surprisingly simple and easy to make with literally a handful of ingredients…

Skinny Strawberry Pop-Tart Cobbler

Sometimes… you get a wild idea and you just have to go with it. This Skinny Strawberry Pop-Tart Cobbler was definitely one such idea. I had come across a fun idea for a strawberry pop-tart pie, but.. to be completely honest with you, homemade pie crust scares me. So, I started to think back to this summer when I made a few delicious and easy cobblers. Then BOOM lightening struck and the world made sense.

'Nut & Seed' Grain-Free Pumpkin Spice Granola

It's been a hot minute since I made up a batch of homemade granola, mostly because it's just been way too hot here to even think about turning the oven on. But, sometimes... it's just worth it. And this morning? It was just that - totally worth it! With pumpkin spice season on the horizon, I thought there was no better time than now to tempt the cooler weather in with another pumpkin inspired treat!

I based this grain-free granola off of one that I made a while back. The main differences would be the spice used in it and the seeds that I chose to include. Since we're going with the Fall theme, I decided to use pumpkin seeds. Two kinds of pumpkin seeds, that is. I picked up a raw one to roast with the granola, and a lightly salted roasted seed called 'snow white' pumpkin seeds to add in at the end…

Skinny One-Pan Chicken Pot Pie

Picture this. It's the end of my week. I go grocery shopping on Thursdays and... I legit have had nothing planned to cook for the past few days. So, to say that I'm running on fumes over here would be an understatement. I've got pieces and parts of a few different things, but nothing that seemingly went together.

Trying to avoid a trip to the store or fast-food I got to thinking. My initial thought for dinner tonight was to make a quiche since I've got some eggs leftover. But, I also really really really don't want to have my oven on. Much less for an entire hour. NEXT. Being as I had some leftover phyllo dough in the freezer along with a plethora of veggies... I settled on a pot pie!

Pie in a Pumpkin (Pilgrim's Pumpkin Pie)

Haven't you ever wondered how pumpkin pie got started? Did the pilgrims really make 'pumpkin pie' for the first Thanksgiving? I guess we'll never know. But, if they did, it probably would have been a lot different from today's standard pumpkin pie. And according to one source, it's thought that it would have been more of a 'pie in a pumpkin'.

This more 'traditional' pumpkin pie is basically made by baking a pie pumpkin and filling it with a delicious lightened up custard mixture that bakes into the whole pumpkin; giving you all the flavors of the pumpkin pie that we all know and love...
