3 Ingredient Beet Gnocchi

February 12, 2019 Amanda Plott

Not all Valentine eats have to be treats! These 3 Ingredient Beet Gnocchi are perfectly festive to serve as a Valentine’s Day lunch or dinner. I’ve made gnocchi a handful of times before. In fact, I’ve made THIS very gnocchi before.

The thing I love about this gnocchi is that it’s so easy to make, especially compared to other gnocchi recipes out there. This one takes a whopping 3 whole ingredients and just about 10 minutes of hands on rolling, cutting, preparing.

3 Ingredient Pimento Cheese Stuffed Jalapeño Poppers

January 28, 2019 Amanda Plott

The BIG football game is upon us THIS weekend, y’all! My family and I are already busy making gamely spread plans. I decided though, that I need to have a practice run this weekend though to test out this new recipe. And it worked out so well that I just HAD to share it right away. I mean… how can you go wrong with a 3 ingredient wonder?

How can you go wrong with stuffed Jalapeños? Or cheese? Or bacon? The simple answer is… you can’t! These Jalapeños aren’t stuffed with any cheese though. Nope! They’re stuffed with none other than pimento cheese. Don’t know what that is? Well, you should! Pimento cheese is a southern staple that’s made with shredded cheese, pimentos, and a few other things. It can be used as a spread on a sandwich or even a dip for crackers…

I’m telling y’all. I’m still working on my breakfast game. Sometimes a girl just wants something savory. And sometimes… it’s the sweets being craved. Today I was craving a little bit of both. Something sweet. Something salty. And definitely something crunchy! That’s where this easy-peasy 5 Ingredient Peanut Butter Granola comes in!

With just 5 ingredients and 5 minutes or hands on time, you too can have this delish granola in your life. And why not? Granola can be expensive and full of things you don’t like, don’t want, and/or don’t care about. Not this granola.

Eggnog Bread Breakfast Sandwich

December 14, 2018 Amanda Plott

This past week, I got my hands on some delicious ‘tipsy’ cranberry jam that is made here locally. And since I already had some egg nog bread sitting on my counter ready to go, I thought I should find some clever way to put the two together!

While this sandwich isn’t exactly conventional, it takes a page out of that ‘mcgriddle’ play book. Putting the two powerhouses of sweet and savory into each and every bite. The sweet being the egg nog bread and the jam and the savory being the bacon and the egg with cheese…

Instant Pot Chicken Caldo

December 1, 2018 Amanda Plott

Well, it’s still barely winter here in Texas. Though it is about as winter as it’s likely to get here outside of a couple more cold fronts and a freeze or two. Even so! We’re in the throes of soup season and I wanted to make some more soup, DANG IT.

Caldo is one of the most simple soups out there. It’s a Mexican style soup that’s very brothy and full of several different kinds of vegetables. You will probably find it on any good Mexican restaurant’s menu, whether it’s beef or chicken. The way that I know that? My little brother used to order it all the time when we were younger. It was always one of his MOST favorite things…

Oh. My. Gosh. This Dark Chocolate 'Crazy Cake' is delicious, y’all! The first time I heard about ‘wacky cake’, I was more than a little skeptical. How can you make a good cake with no butter, eggs, or milk?! Well, as it turns out, there’s a couple of secrets to this cake that make it perfectly fluffy and delicious! In fact, it’s one of my favorite cakes. One of these simple swaps is using Mazola® Corn Oil in place of another oil or butter. I’ve been cooking and baking a lot more lately with corn oil. A clinical study showed Mazola Corn Oil reduces cholesterol 2x more than extra virgin olive oil. To learn more about this claim, see MAZOLA.com.

I wasn’t done there though. I also swapped out some of the sugar for a natural sweetener, and the cocoa powder for a dark chocolate cocoa powder. The end result was this tasty and easy cake that’s made all in ONE dish. Yep. No bowls to clean. No beaters to clean…
