Sundays are for brunching, and this Sunday is no different. With knowing tomorrow is Monday, and that today was going to be a lazy day for the most part, I decided to go ahead and make breakfast yesterday. Well, what does that mean? This Overnight Blueberry French Toast Bake is made ahead of time and sits overnight in the fridge where the big cubes of hearty bread cans oat up eggs, cream cheese, blueberries and the like. Then in the morning, it’s ready to be baked and enjoyed!…

Skinny Bacon & Cheddar Irish Soda Bread

There is one thing that I absolutely MUST make every year towards the end of February and the beginning of March, and that is Soda Bread. Again, it’s a nod to my Irish roots. Irish soda bread is a yeast-free bread that is quick and super easy to make. Really, guys… it’s almost fool-proof. Almost. Trust me, I know because baking tends to scare the pants off of me.

I used my original Healthified Irish Soda Bread as a base for this Bacon & Cheddar variation. This time around I used whole wheat flour to get a more golden color at the end, and of course… loaded this bad boy up with plenty of cheese and bacon goodness…

Alright, alright… so… monkey bread has been an obsession of mine lately. I admit it! I can’t help it. There’s just something about that warm fluffy bread that’s baked together with a bunch of ‘naughty’ bits. Of course, this monkey bread is a bit different. It’s savory instead of sweet. Bacon, egg, and cheese… to be sure!

Skinny Eggnog Bread

It’s been a while since I made some homemade bread. And being that it’s baking season, I thought it was high time to made another loaf! I’ve been without my hand dandy bread machine for a long time, so that means that any bread requiring yeast is pretty much out of the question. Yeast, outside of a bread machine use, scares me!

Don’t worry though! If yeast breads intimidate you too, then this Skinny Eggnog Bread is a perfect yeast-free option that is easy to toss together, and requires no kneading and very little hands-on time…

Skinny Cranberry Bliss Bread

I’ve somehow done it, y’all. I’ve somehow managed to wear myself out on pumpkin for a bit. I don’t know how, I don’t know when, and I really don’t like it. But… at least in the meantime while I recuperate, I can play around with cranberries now!

I don’t know about the rest of the country, but here in Austin Texas… the allergies are killing everyone right now. ‘Tis the season, I guess. So while I’m a little under the weather (pun intended) and my throat is aching, I thought it would be a nice time to make a fluffy warm breakfast bread.

Farmers' Market Cornbread

While it’s chilly here in Texas, you better believe that I’m taking FULL advantage of it. Which is why tonight I’m making a special sort of soup tonight and this awesome Farmers’ Market Cornbread to go along with it!
