Most recently I found a fun way to make tamales in the instant pot, and being as I’ve also made a cheesecake in the instant pot too, I thought… is it possible to make mini cheesecakes? As it turns out, it is! These Instant Pot Cheesecake Bites are fun and easy to make. Plus, they’re lightened up just enough to be guilt free while still tasting great.

As it turns out, the instant pot is a great way to make cheesecakes, and these mini ones are made directly in my handy-dandy egg bite mold! I lightened them up by using sweetener instead of most of the sugar, and also used a reduced fat cream cheese…

Healthy & Easy Kid-Friendly Spaghetti Sauce

I'm calling this kid friendly spaghetti sauce because, I generally like to put actual onions and garlic into my spaghetti sauce. However, my little one would turn her nose up at that in a heartbeat, and seeing as how she specifically requests spaghetti every week, I figured that I ought to oblige her with something that would suite her desires!

Besides, who doesn't enjoy eating like a kid again? In my mind, that's one of the perks of being a parent; reliving all the things that you loved when you were growing up!

Though my mom was more of a Hamburger Helper sort of spaghetti maker.

She swears by Hamburger Helper 'Spaghetti' to this very day. Ugh…

Cranberry Jalapeño Cream Cheese Spread

This Cranberry Jalapeño Cream Cheese Spread has been in my family for years. The base of cream cheese and green onions is topped off with a homemade cranberry sauce that’s kicked up a bit with the warmth of jalapeño and bright citrus notes from orange and lime.

I never in a million years would have guessed that I would ever make yogurt. I don’t know why, but I just never really considered that I even could make it. Mostly because I honestly didn’t know the process of how to make yogurt. And… then I got a pressure cooker.

As it turns out, making yogurt is really easy to do. And what’s better? You can make it just the way you want, in any flavor you want, and as tangy as you want. Plus, making it yourself saves you calories AND money! So, as scary as the concept may seem, it’s definitely worth trying out!…

Peach Bundt Cake

One of my favorite things about summer is peaches. I don’t know about anywhere else, but here in Texas locals come out in droves selling them at the side of the road. This year, I haven’t gone anywhere to see any. But, my local grocery store thankfully has ‘Texas Peaches’ on hand from local vendors so that I was more easily and safely able to get my peach fix this year.

This cake is truly one of the most moist and deliciously each cakes out there. The peach juices and fresh peach really take this simple and easy to make cake to the next level. It would be just as good as part of a breakfast or brunch, as it would be for dessert!…

Vegetarian Ramen Broth (Instant Pot)

Since my brother has been living with me we’ve had the amazing opportunity to totally geek out about food. While he was off on his own in the wilds of Colorado he fell in love with cooking. Mostly out of necessity since the small town where he was had limited places to eat that weren’t fast food. Some of the nearest restaurants that were edible were an hour or further away.
