I don’t know. I just like to shake things up sometimes by putting two or three things together that I enjoy and hoping that it turns out right. Today? It’s a monte cristo sandwich and a breakfast bake or casserole. Yep. And guess what? It’s pretty damn tasty if I do say so myself. I’ll tell you another thing, after this past week, I deserved a little somethin’ something’ special.

This Monte Cristo Breakfast Casserole takes the cake. Like literally. It’s a monte cristo in the form of a better-for-you ‘strata’ or bake. Eggs. Cheese. Ham. Bread. Dijon. 'Brain' Deviled Eggs

These deviled eggs are all dressed up for Halloween and ready to go with some pink hue to the filling and a fun little design on top that makes them look like mini brain bites. Beef Fajita Crustless Quiche

As of midnight tonight, we here in Austin (and surrounding areas) are on official lock down with a ‘shelter in place’ until April 13th. This comes after being under a quarantine mandate for a week or so as well. Being as times are tough for everyone, I’m trying to be super creative in how I use up leftovers and the few pantry staples that I have been able to get my hands on.

Being as we had beef fajitas a few nights ago, I had some leftover cooked beef and peppers and onions. So I thought I’d use them up in a quiche because when growing up, quiche was one of the few ways that my family would repurpose leftovers. It’s simple, easy, and delicious every time…

Air Fryer Breakfast Taquito

Sometimes you just need a nice warm breakfast to get you going in the morning, and recently since I’ve fallen in love with lavash bread, I decided to try my hand at using the lavash to make a breakfast taquito! Being as I tend to be a lot more of a savory breakfast person, rather than a sweet breakfast person, breakfast taquitos are pretty much my jam.

Normally breakfast taquitos are made with flour tortillas, but the lavash bread gives me a lot more bang for my buck, if you know what I mean. (It’s fewer calories and whole wheat!) Breakfast is the most important meal of the day, they say. And I tend to agree. If you start your day off right with a nice breakfast, the rest of the day tends to follow suit. One of my all time favorite breakfast (or brunch) items is eggs benedict. A simple breakfast bite with english muffins, eggs, and hollandaise sauce.
