It’s Spring and for me that means it’s time to play around with all things lemon and poppy seed. This Lemon Poppy Seed Chicken Salad is a fun twist on a classic chicken salad. That’s chicken salad, not chicken in a salad. Most of the time when you think of lemon and poppy seed, you think of sweet treats. But, not today!

This chicken salad is savory through and through. The bright pop of lemon and the bit of crunch from the poppy seeds really makes this a chicken salad to remember. With warmer weather starting to roll in, I’m craving fresh bright flavors more and more. And this Greek Chickpea Salad is as fresh and bright as one can get. It’s a garbanzo bean based vegetarian ‘salad’ that’s mixed together with bell peppers, onion, feta cheese, and a homemade easy to make vinaigrette dressing.

This dish ends up being naturally meatless, vegetarian, and gluten free too. Plus, there’s under 300 calories in a full serving so you really can’t go wrong with it whether it’s for lunch, snack, or as a side for dinner!…

Chicken salad has to be one of my all time favorite lunch options. But, what happens when you’re trying to lessen the amount of meat in your day? Well, the answer is this Chickpea Salad! It’s a quick, easy to make, and delicious vegetarian alternative to chicken salad.

Apple Spice Granola

This week we’re finally going ‘back to school’. I made the tough decision to start my little one with learning online at least for the first week, and maybe even on to the first semester. There is no other reason than the fact that I work from home myself and have for years, so the idea of her doing school online here at the start, isn’t really such a ‘big deal’. Even so, it’s still BACK TO SCHOOL. Which means any and all things involved in that. Even breakfast!

Thai Chicken Wrap

Lunch is served! This Thai Chicken Wrap is as simple as it comes. A simple lavash pita bread wrapping cabbage, carrot, peanuts, and chicken! There isn’t much here to lighten up since all of the ingredients are already fairly clean and simple. And this Thai Chicken Wrap must absolutely be served with a Thai Peanut Dressing for dipping.

The sauce is pretty much what makes this wrap ‘Thai chicken’. But, if you aren’t a fan of Thai peanut sauce then you are more than welcome to try any other number of dipping sauces that you enjoy instead. This wrap is super easy though and perfect PERFECT for meal prepping lunches for the week…
