Healthy Blender Brownies

I’ve made healthy brownies in the past, but never quite like this. These Healthy Blender Brownies take it to the next level with all the ingredients easily being tossed into a blender and purred down into a smooth batter that you then bake and enjoy. Yep. That’s it. No bowl required for this one. Just a blender (or food processor) and the baking dish.

I used quick oats in mine, but I think regular old-fashioned oats would work just as well in these brownies. They bake up into a light brownie that’s just fudge enough for my liking without being overly wet or dense. I find that the more cakey brownies tend to be better for brownie sundaes anyway since they can soak up the ice cream goodness…

Pineapple Upside-Down Blended & Baked Oats

I’ve made blended oats in the past and they always turn out really well. Honestly, I’m not sure why I don’t make them more often than I do because they’re so simple, healthy, and easy to make. These Pineapple Upside-Down Blended & Baked Oats basically merge blended oats with a pineapple upside down cake. So you get to have your cake and eat it too.

This breakfast treat starts out with brown sugar, pineapple, and a cherry on the bottom, then you layer on the pineapple infused blended on, and another layer of brown sugar, pineapple, and cherry. Then you bake it all together and come out with this tasty breakfast that’s sure to impress!…

2 Ingredient Cookies

I didn’t think it could be done, but yes - cookies can be made with a mere two ingredients. These 2 Ingredient Cookies are super east to make, because it’s just two ingredients, and they’re great as a snack, or even for part of a breakfast or lunch. So what are the two ingredients? Oats and banana. The oats do need to be quick oats and the banana has to be overly ripe. Other than that? There’s nothing more to them!

There aren’t any tricks to these cookies. They do end up being vegan, vegetarian, dairy-free, low fat, and bunch of other things that make them into not only one easy cookie, but a healthy one too. I’ve been enjoying mine as part of my lunch with apple slices, peanut butter, and some other snacks treats…

Dill Pickle Chex Mix

It’s been a while, but I had seen this idea a while back now for a pickle flavored chex mix which I’ve got to be honest, really intrigued me. I like pickles, and I like chex mix… but would I like them together? As it turns out, I do! As is usual with chex mix, this one starts out with - you guessed it - chex cereal. I went with corn, but you can really pick wheat, rice, etc. Whichever base you want to start with.

Then we’re adding in other tasty bits like cashews, pretzels, and even some bagel crackers. You can use bagel chips/crisps, but I couldn’t find any of those to save my life, so I went with some small round bagel inspired crackers that I found instead. That’s sort of the fun part about chex mix anyway, isn’t it? Getting to swap things around!…

Peanut Butter & Jelly Cookie Cups

These Peanut Butter & Jelly Cookie Cups are my JAM. Hah. Get it? I’m feeling extra punny today apparently. So these cookie cups are similar to one I did back a few months ago, but instead of hazelnut spread I decided to go with PB&J! Because who doesn’t like a good peanut butter and jelly anything? Well, other than the poor folks who are allergic. Which if you are? This obviously isn’t the recipe for you.

Now. These cookie cups start off with a refrigerated peanut butter cookie dough. It’s proportioned and ready to go so it makes life super simple. Just pop the dough into the mini cupcake pans and bake away…

English Muffin Loaf

A day late, but we’re going to blame it on the Holiday. Today I have for you, this English Muffin Loaf! It’s an english muffin in the form of a loaf of bread. It’s sliceable and yumable just the same as an english muffin, except you don’t have to tend to it like you would if you were making homemade english muffins.

The loaf is full of nooks and crannies just like a proper english muffin, and I really want to try to cut it in half lengthwise and make some sort of breakfast sandwich on the entire loaf. But, for now all we’re doing is the loaf itself…
