With Christmas just a few days away now, I thought I would try my hand at making a dessert to have on hand that was not only festive, but tasty too! I really enjoy roll cakes, even though they aren’t the easiest of cakes to make, they are always super impressive. Especially when you make them colorful and halfway homemade; which is exactly what this Christmas Cake Roll is!

I started off with a simple box mix that I whipped together, colored, baked, and then filled with a homemade buttercream frosting. The frosting here is always the best part, that’s because it’s homemade and not out of a can. Although, I will say that everything has its place. Even canned frosting…

There is nothing that puts a smile on my face more than my daughter and rainbow sprinkles. That's why my daughter and I got on it this weekend and made this oh-so-pretty confetti cake! Confetti, funfetti, it's all the same thing. It means SPRINKLES, and lots of them too! We're talking, I bought a whole container of rainbow sprinkles specifically to use in and on this cake. And let's just say, I am not disappointed.

Of course, by saying my daughter helped me, it really means that she stood on the chair in the kitchen, dumping things into the bowl and sticking her cute little fingers into everything sweet she could manage. But you know what? It's helping her with her math and we're growing and learning together. One cake at a time…

Who's ready for Spring? I know that I am! I've said it before, and I'm sure I'll say it a million and one times more, but Spring has to be my favorite season! The sun is changing, the light is changing, the air smells and feels different, and I'm always in awe of the flowers and greenery as it starts to return to life.

What better way is there to celebrate anything (especially Spring) other than with cake?! So today we're going to cheer on Spring with some adorable Chocolate 'Carrot Patch' Cupcakes! My dad's birthday always falls around Father's day, which usually means... double the celebrations! Some of his most favorite beers are from the local Austin brewery, Infamous Brewing Company. I've had the honor of meeting the owner (Josh) and hanging out at the brewery a few times. They've won a LOT of medals for their selection of regular and seasonal beers. Their Pumpkin Massacre is a family favorite when it comes around in the fall.

Their brewery was literally right down the street from my parents when they lived over near the lake. Now it's a bit of a trek for either of us, so unfortunately we don't get to go there much anymore. The good news is that they sell Infamous beer in almost any store here around Austin and most of Texas too. If you can't find Infamous near you though, you could always use another beer of your preference for these cupcakes...
