Pineapple upside-down cake is one of my favorites, and in keeping with the Hawaiian and pineapple theme of the week, I thought a fun Hawaiian themed take on monkey bread would be perfect! This week treat is relatively easy to make and tastes just like the cake. One of the best parts, is that with it being monkey bread, you automatically have an excuse to eat it for breakfast or brunch!

Long story short, there was a trip being planned to Hawaii that I would currently be on. But, then this virus took over the world. So. The trip to Hawaii didn’t happen this summer! That being said, a few recipes were planned and made well ahead of time so that I would be ahead on things before going on vacation.

I ended up trading my Hawaiian excursion for visiting my mother. And to be honest? Visiting her safely is way better than any tropical paradise. Skinny Hawaiian Crunch Cake

Every year at the end of summer my mom has had a Luau, a tradition that has been going on since she moved here to Austin; so let's say this was the fourth year. Each time the Luau gets bigger and better than the year before, always inviting new and old neighbors or friends. The Luau is done sort of in pot-luck style with my mom and I making a few main things that go along with the theme while guests bring their additions to the spread.

There are a few select things that I have perfected over time and made each year for this Luau. A few things have changed but for the most part it all stays the same; a pineapple salsa, Hawaiian queso, and some sort of dessert...

Skinny Hawaiian Parfait

Well, with the end of summer drawing near... I feel like I needed just a little more fun and sun. My mother always throughs a luau party at the end of summer, and with my little one all about Hawaii right now - I got rather inspired.
