Bacon, Egg & Cheese Breakfast Fries

Sometimes you just need something fun and easy for breakfast. These Bacon, Egg & Cheese Breakfast Fries take all the best parts of breakfast and put them together over fries. Think of it like a loaded up pile of hash browns with all the fixins. We’re talking ooey gooey cheesy scrambled eggs topped off with bacon, all atop some hot and crisp waffle fries.

So how is it ‘good for you’? Well, everything in moderation - you know? Sometimes you have give yourself a little bit of wiggle room. One of the things I did though, was to use a low sodium center cut bacon in place of standard. Other than that, the American cheese is surprisingly lower in calorie than a nice slice of cheddar, and it melts better!

This makes for a pretty sizable lot of fries for breakfast, which makes it an excellent weekend breakfast or brunch for sharing with the family! My favorite thing about these fries though, is how quickly and easily it all comes together. Especially if you have leftover cooked bacon on hand like I usually do.

I definitely suggest putting some fresh pico on top of this to get some contrast to the otherwise rather salty and savory flavors going on here with the loaded up breakfast fries.

Bacon, Egg & Cheese Breakfast Fries

Breakfast topped fries! Waffle fries that are loaded up with all the breakfast faves - bacon, egg, and cheese too!

Ingredients

  • 11 Oz. Frozen Fries
  • 4 Whole Large Eggs
  • 4 Slices American Cheese
  • 4 Slices Cooked Bacon
  • 2 Oz. Fresh Pico de Gallo

Instructions

  1. Cook the fries according to package directions.
  2. While the fries are cooking, lightly coat a skillet with non-stick spray and cook the 4 Whole Large Eggs to scramble.
  3. Set the oven to broil and line a baking sheet with a silicone mat or foil for easy clean up.
  4. Once the fries are done, transfer them to the prepared baking sheet and pile them up a bit more on top of one another.
  5. Top with the scrambled eggs, 4 Slices American Cheese, and the 4 Slices Cooked Bacon.
  6. Place in the oven to broil until the cheese has melted, about 5 minutes or less. Keep an eye on the fries during this time!
  7. Once done, remove from the oven and top with the 2 Oz. Fresh Pico de Gallo.
  8. Enjoy right away!
