Chicken Salad Lunch Box

I was asked for more snack, lunch, and meal prep box ideas - so I’ve been hard at work coming with a couple each week! This Chicken Salad Lunch Box has to be one of my favorites though. Then again, almost anything with chicken salad is a favorite of mine.

For this lunch box, I used the base for my standard chicken salad that I use in my stuffed tomatoes - and made a few adjustments to it according to what I happened to have on hand this time around. Namely swapping the cranberries for raisins, and using pecans for my nut of choice. Other than that, it’s pretty much same ole’ same ole’.

Turning this chicken salad into a full on lunch is a pretty easy task. I paired it up with a large romaine leaf that’s perfect for using as a scoop itself, or rolling the chicken salad up in it. There’s also the nut & seed crackers there which are also a means for transporting the chicken salad to your mouth. Other than that, there’s some cherry tomatoes to cut through the richness of the chicken salad, and of course some added apple!

The best part about this lunch though, is that it’s easy to make and gives you a full weeks wort of prepared lunches. That’s 5 - count them 5 - boxed lunches for grab-and-go mornings. Toss it in your lunch box with an ice pack and you’re done.

Feel free to make this chicken salad your own by choosing your dried fruit and chopped nuts accordingly. This time around, I went with raisins and pecans! But last time it was cranberries and walnuts.

The Skinny:
Servings: 5 • Serving Size: 1 Prepared Lunch Box • Calories: 399 • Fat: 13 g • Saturated Fat: 2 g • Carb: 51 g • Fiber: 7 g • Protein: 23 g • Sugar: 32 g • Sodium: 233 mg

Ingredients:
Chicken Salad:
• 2 C. Cooked & Shredded Chicken
• 1/2 C. Dried Raisins or Cranberries
• 1/4 C. Light Mayonnaise
• 1/4 C. Plain Fat-Free Greek Yogurt
• 1/4 C. Chopped Raw Nuts
• 1/4 C. Chopped Apple
• 2 Green Onions, Sliced
• 1/2 Lemon, Juiced
• Salt & Pepper to Taste

Lunch Box:
• 5 Large Romaine Lettuce Leaves
• 5 Apple Slices
• 20 Nut & Seed Crackers
• 15 Cherry Tomatoes

Directions:
In a large bow, mix together all of the ingredients for the chicken salad until well blended; set aside.

Set out your lunch containers and place a large romaine leaf into the base of each.

Scoop about 1/2 C. of the chicken salad into each lunch box and add in an apple slice, 4 crackers, and 3 cherry tomatoes.

Seal the containers up and store in the fridge for 3-5 days - until ready to enjoy.
