Deli Snack Box

As if you couldn't tell, I'm a snacker, y'all. I love snacky little plates and boxes that give me a variety of things to enjoy so that I don't get bored with what I'm eating. Whether is actually a snack or a lighter meal is always debatable since we all need and want different things as snacks and meals. Me? I like BIG snacks or small meals. And this Deli Snack Box is just that!

So, I'm calling this a 'snack' box because it would really be good as a pre or post workout 'fill me up', but honestly it's nearly filling enough to take the place of a lighter on-the-go meal. It's somewhere between snack and meal, which is exactly where I wanted to be today.

This Deli Snack Box is loaded up with protein, healthy fats, and of course... cheese! Cheese and crackers have always been a staple snack for me, so this box just takes that a step further and makes cheese and crackers into a more appropriate adult snack that just about anyone can enjoy.

What's even better about this box is that you can make it well ahead of time; making it a perfect grab-and-go meal or snack when you're on the run. If you're planning to make this more than 2-3 days ahead, just be sure to leave your eggs in their shell and peel them just before eating. It'll help keep that hard boiled egg fresher for longer.

No matter how you decide to enjoy this deli box, as a snack or a light meal, you'll love it either way! I always find it helpful to prep a few of these at a time to just have them on hand through the week so that when I need a quick pick-me-up, I've got it ready to go.

It's simple foods that leave me feeling happy, healthy, and satisfied!

Ingredients:
1 Hard Boiled Egg, Halved
6 Cherry/Grape Tomatoes
2 Tbsp. Almonds
1 Oz. Reduced Fat Cheese, Cubed
2 Thin Slices Deli Turkey
6 Reduced Fat Crackers

Directions:

Put everything into a sectioned 'snack' box.

Enjoy right away or cover and store in the fridge until ready to eat.
