Everything Chicken Salad

It’s a wide world of crazy out there right now. Things are being shut down left and right and groceries are scarce at this point to say the least. Until things return to normal, I’m doing my part in staying around home and coming up with simple, easy to make recipes that can hopefully be made with just a few staple pantry ingredients that everyone should have on hand. I’ll show you that it IS possible to eat well and healthfully even in the midst of a global pandemic.

This Everything Chicken Salad is one such recipe! Low carb, gluten free, and keto friendly! Chicken salad is pretty much a fail-safe bite that’s full of protein, easy to make, and fairly versatile as it can be used as a dip, spread, or stand-alone. Being as I always always have ‘everything seasoning’ on hand, I thought I could put the two together!

This chicken salad is pretty standard. I made it a bit better-for-you by way of using plain fat free greek yogurt, plenty of fresh veggies, and of course seasoning! The veggies here are flexible. Don’t have carrots? Use some nuts or another crunchy vegetable like bell pepper or even cucumber.

As I said, this chicken salad could be used on a sandwich, as a dip with some bagel or zucchini chips, or even added to a salad if you happen to have any green leaf lettuce on hand! Thankfully our local grocery chain has been doing a really lovely job of restocking their shelves at night in the midst of this Corona situation.

Another good way to enjoy chicken salad is stuffed into a nice big juicy tomato. For today, I served mine simply with some bagel crisps and slices of tomato. A light lunch, but an easy lunch too!

Chicken salad that's made quickly and easily with a touch of cream cheese and plenty of everything seasoning! All that you love about 'everything seasoning' incorporated in a simple and delicious chicken salad.

Prep Time: 10 Minutes • Cook Time: 0 Hours

The Skinny:
Servings: 6 • Serving Size: 1/6th • Calories: 185 • Fat: 6 g • Saturated Fat: 2 g • Carb: 5 g • Fiber: 1 g • Protein: 26 g • Sugar: 3 g • Sodium: 115 mg

Ingredients:
• 2 Boneless Skinless Chicken Breasts
• 1 C. Plain Fat Free Greek Yogurt
• 3/4 C. Carrot, Shredded
• 3/4 C. Celery, Shredded
• 1/3 C. Red Onion, Chopped
• 1/4 C. Cream Cheese
• 1 Tbsp. Everything Seasoning
• Salt & Pepper to Taste

Directions:
Mix together the 2 Boneless Skinless Chicken Breasts, 1 C. Plain Fat Free Greek Yogurt, 3/4 C. Carrot, Shredded, 3/4 C. Celery, Shredded. 1/3 C. Red Onion, 1/4 C. Cream Cheese, 1 Tbsp. Everything Seasoning, and Salt & Pepper to Taste.

Chill in the fridge for a while.

Once nice and cold, devide evenly and enjoy!
