The Forking Skinny Dinner Plan (Week 2)

Below is this week's dinner plan!

These dinner plans are based off of a 4 person family and include the meal plan and shopping list for your convenience.

I've also created the shopping list with the notion that you have basic spices and pantry/kitchen staples on hand. So, you'll want to double check the recipes and the shopping list to be sure that you have everything you need.

Below you will find the shopping list and weekly meal plan.

Monday: Crock Pot Italian Turkey Meatballs & Sauce + Noodles + Italian Side Salad
Tuesday: Skinny Chicken Lettuce Wraps
Wednesday: Leftover Turkey Meatball as Sliders + Steamed Green Beans
Thursday: Vegan Cauliflower Rice Taco Bowls
Friday: Kid's Choice 'Family' Night!
Saturday: Pizza Night!

Shopping List:

Crock Pot Italian Turkey Meatballs & Sauce:
1.25 Lbs. Extra Lean Ground Turkey
1/4 C. Whole Wheat Bread Crumbs
1/4 C. Grated Parmesan
1 Onion
1 Egg White
2 Tsp. Parsley
2 Tsp. Basil
8 Garlic Cloves
1 Tsp. Extra Virgin Olive Oil
28 Oz. Crushed Tomatoes
28 Oz. Whole Peeled Tomatoes, No Salt Added
2 Tbsp. Tomato Paste
1 Bayleaf
Noodles or Zoodles
Light Italian Side Salad

Skinny Chicken Lettuce Wraps:
1 Tsp. Extra Virgin Olive Oil
1 Lb. Extra Lean Ground Chicken Breast
1 Onion
8 Oz. Water Chestnuts
1/4 C. Hoisin Sauce
2 Garlic Cloves
2 Green Onions
2 Tbsp. Reduced Sodium Soy Sauce
1 Tbsp. Rice Wine Vinegar
1 Tbsp. Fresh Ginger
1 Tsp. Sriracha
1 Whole Head Butter Lettuce

Leftover Turkey Meatball Sliders:

Whole Wheat Slider Buns
Steamed Green Beans

Vegan Cauliflower Rice Taco Bowls:
1/3 C. Avocado
1/4 C. Green Onion
2 Tbsp. Fresh Cilantro
2 Tbsp. Extra Virgin Olive Oil
2 Tbsp. Fresh Lime Juice
2 Tbsp. Eggless Mayonnaise (or Light Mayo if not Vegan.)
2 Tbsp. Dairy Free Greek Yogurt (or Fat Free Yogurt if not Vegan.)

1 C. 'No Salt' Black Beans
