This dish brings juicy ground chicken together with fresh ingredients for a delicious, guilt-free weeknight dinner that'll have your taste buds dancing.

Ingredients

  • 1 Lb. Ground Chicken
  • 1/2 White Onion, Chopped
  • 1 Tsp. Minced Garlic
  • 1 C. Cherry Tomatoes
  • 1 C. Marinara Sauce
  • 1/4 Tsp. Dried Oregano
  • 1/4 Tsp. Dried Basil
  • 1/4 Tsp. Dried Parsley
  • 1 1/2 Tsp. Balsamic Vinegar
  • 4 Oz. Fresh Mozzarella Pearls
  • Optional Toppings: Chopped Fresh Basil, Balsamic Reduction, Grated Parmesan

Instructions

  1. Heat Things Up - Set a large skillet over medium-high heat and give it a light spritz of non-stick cooking spray.
  2. Cook the Chicken - Toss in the ground chicken and break it up with a spatula. When nearly done, add in the 1/2 White Onion and 1 Tsp. Minced Garlic Cook for around 7-10 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink.
  3. Add the Tomatoes - Stir in the 1 C. Cherry Tomatoes and let them sizzle for about 2-3 minutes until they're just starting to burst and release their juices—cue that tomato goodness!
