Guacamole & Hummus Taquitos

Okay, okay, so these are big-as-yo-face taquitos. I get it. Taquitos are usually rolled up pretty tightly and with barely any filling, but I was hungry today y'all and in the mood for a nice hearty portion of vegetarian filling.

They're Texas size taquitos. But, if it makes anyone feel any better we could also call these baked burritos, I guess.

Either way, they're super filling and amazingly delicious. Plus, I find it pretty fun to play with fusion sometimes. I mean, who puts hummus on a taquito? Well, I do. Hummus is typically made from garbanzo beans, so this is basically a white bean taquito. Works for me!

I loaded these with a half cup each of some of my most favorite things; guacamole, humus, and who could forget the cheese? Man, oh man - am I a sucker for cheese. You could really use any flavor of the 100 calorie guacamole packs out there, I went with spicy today.

I also chose a Sriracha hummus, again because I was in a spicy sort of mood - though any hummus flavor that trickles your fancy is sure to work out just as well.

Once these were done in the oven I gave them a little drizzle of hot sauce and served them with a side of salsa for dipping, because - yum.

These taquitos are a super simple and easy to make dish. Perfect for a weeknight meal or even as a quick lunch. Of course, I was extra hungry so I opted for two. Which may have been a mistake since I was super full. One would definitely have been enough!

Lesson learned.

The Skinny:
Servings: 4 • Size: 1 Taquito • Calories: 196.3 • Fat: 12.6 g • Carb: 18 g • Fiber: 8.9 g • Protein: 10.8 g • Sugar: 0 g • Sodium: 616.3 mg

Ingredients:
4 Whole Wheat & Corn Tortillas (Mine were 50 Cal. each.)
1/2 C. Hummus (I used 50 Cal. Sriracha flavor.)
1/2 C. '100 Calorie' Guacamole
1/2 C. Fresh Pico
1/2 C. Fat Free Cheese

Directions:
Preheat the oven to 350 degrees F. and line a baking sheet with foil.

Lightly coat the foil with some non-stick spray; set aside.

Warm the tortillas and cover each with 2 tbsp. hummus, guacamole, pico and cheese.

Roll it all up tight together.

Place the taquitos seam-side down onto the prepared baking sheet.

Place in the oven to bake for about 10-15 minutes or until the edges are browning and the tortillas are crisping up.

Once done, remove the pan from the oven and serve the taquitos right away.
