Ham & Cheese Omelette

I don’t know about you, but we had ham as part of our Christmas dinner and I managed to keep some on reserve for leftover breakfast this morning. This Ham & Cheese Omelette is one of my favorite ways to use up leftover ham. I based this omelette off of a few others that I’ve made in the past that packs an omelette up with as much protein as possible.

I like to sub in egg whites for part of the egg in any omelette. But, I try to keep at least one yolk in there for some color and flavor. Other than that, I love to put cottage cheese in my omelettes because it gives a bit of a boost to the protein and also bonus melty cheese goodness.

Outside of that, I used unsweet almond milk instead of regular milk and of course some standard American cheese because it’s pretty much unbeatable when it comes to melting power for that ooey-gooey cheesy goodness on the inside of the omelette.

I used up leftover ham, but you could also use deli ham if you don’t have any leftovers on hand. All in all this was a damn fine breakfast to wake up to post Christmas stressing.

A tasty protein packed omelette that's stuffed with cheese, cottage cheese, and ham too! This is a great way to use up leftovers.

Ingredients

  • 1 Whole Egg
  • 2 Egg Whites
  • 1 Tbsp. Unsweetened Almond Milk
  • 1/4 C. Cooked Ham
  • 1/2 Slice American Cheese
  • 3 Tbsp. Low Fat Cottage Cheese
  • Salt & Pepper to Taste

Instructions

  1. Whisk together the whole egg, 2 egg whites, and 1 Tbsp. milk.
  2. Heat the skillet over medium heat and pour the egg mixture into it.
  3. Set and cook the eggs through before topping with the cooked ham, 1/2 slice of cheese, and 3 Tbsp. cottage cheese.
  4. I like to flip mine over when it's nearly done so that I'm sure both sides of the omelette are cooked.
  5. Fold the omelette over carefully and allow to cook for another minute or so on either side before removing from the heat and plating.
  6. Enjoy right away!
