Gluten-Free Banana Nut Pancakes

My mom lives out by one of the lakes here near Austin, and she keeps talking about this restaurant by her that serves some giant banana nut pancakes. And after a few too many (dozen) mentions of them, I guess the thought sort of stuck with me as inspiration. Banana nut anything is okay by me.

There's something about the smell and the taste that takes me back to my childhood. Maybe it has something to do with the fact that my mom makes some of the best banana bread around.

With the idea already locked in my mind, I decided to go ahead and try my hand at making some banana nut pancakes for myself. But, in a more wholesome way that won't leave me feeling guilty or sprinting to the gym right after indulging.

To start these pancakes off, I made myself some oat flour with rolled oats that I have on hand. Yep! These are going to be gluten-free all the way through. I always feel like I'm getting more out of oats than I am a traditional flour, and the oats leave me feeling fuller for longer. From there, I added plenty of cinnamon and banana.

I didn't use any sugar in the pancake batter. Instead I got a touch of sweetness by adding in some Wallaby Organic Vanilla Bean Greek Yogurt for a boost of protein, and Vans Simply Delicious Granola - Soft Baked Banana Nut Clusters. Both are gluten-free and have less sugar in them. Plus, the granola clusters already have that banana nut taste I'm looking for. Perfect!

Thankfully I had my brother on hand to be a taste-tester. Lucky him. I know it's a hard job, but someone has to do it.

It was a little comical too, since he was sitting there talking to me as he took his first bite before getting silent and suddenly confessing to me that he forgot what he was talking about. Hah! My brother being at a loss for words is a pretty rare thing. So, to say that these are amazingly delicious would be a sad understatement!

Gluten-Free Banana Nut Pancakes

The Skinny:
Servings: 4 • Size: 2 Pancakes • Calories: 258.2 • Fat: 4.4 g • Carb: 42.2 g • Fiber: 5.1 g • Protein: 14.2 g • Sugar: 13.3 g • Sodium: 272.3 mg

Ingredients:
1 C. Old-Fashioned/Rolled Oats
1 Tsp. Baking Powder
1 Tsp. Ground Cinnamon
1 Medium Banana
4 Large Egg Whites
5.3 Oz. Wallaby Organic Vanilla Bean Greek Yogurt
2-4 Tbsp. Fat Free Milk
1 Tsp. Vanilla Extract
1/2 C. Vans Simply Delicious Granola - Soft Baked Banana Nut Clusters

Directions:
Preheat a medium skillet over medium heat and lightly coat it with non-stick cooking spray or oil. Make sure that the skillet is hot before you start cooking your pancakes.

Place the 1/2 C. Oats, 1 Tsp. Baking Powder, and 1 Tsp. Cinnamon into a blender or food processor and process until flour is formed.

In a large bowl combine the 1 Medium Banana, 4 Large Egg Whites, 1/2 C. Wallaby Organic Vanilla Bean Greek Yogurt, 2-4 Tbsp. Fat Free Milk, and 1 Tsp. Vanilla Extract until well blended.

Add the dry oat mixture to the wet ingredients and stir to combine.

Finally add in the 1/2. C. 1/2 C. Van's Simply Banana Nut Soft Baked Granola Clusters.

Use a 1/4 cup measuring cup, drop batter onto skillet and spread out a bit.

Cook until the edges begin to look dry and bubbles start to form on the top of the pancake, about 1 minute.

Using a spatula, flip and cook about 2 more minutes on the other side.

Repeat with the remaining batter, making sure to coat your skillet again with oil between each batch. I got about 8 pancakes with this recipe.

I found the Wallaby Organic Vanilla Bean Greek Yogurt and Vans Simply Delicious Granola - Soft Baked Banana Nut Clusters at Target. Yum! I need to go back for that Blueberry one.

Remove from heat and divide pancakes among plates. Serve with your favorite toppings and enjoy!

I used a sugar-free 'maple' syrup, light butter, a touch more Van's Simply Banana Nut Soft Baked Granola Clusters, and some sliced banana.
