Crafted with a tasty crust of crushed gingersnap cookies, these cheesecakes are layered with a velvety pumpkin filling that’s sweetened just right.

Ingredients

  • 1 Tbsp. Gingersnap Cookie Crumbs
  • 1/2 Tsp. Maple Syrup
  • 2 Tbsp. Pumpkin Puree
  • 1 (5.3 Oz. Container) Fat Free Vanilla Greek Yogurt
  • 1 Tbsp. Jell-O Zero Sugar Cheesecake Instant Pudding Mix
  • Optional Toppings: Pie filling of choice, fresh fruit, chocolate, etc.

Instructions

  1. Place the 1 Tbsp. Gingersnap Cookie Crumbs into the bottom of a small bowl.
  2. Stir together the 1/2 Tsp. Maple Syrup, 2 Tbsp. Pumpkin Puree, 1 (5.3 Oz. Container) Fat Free Vanilla Greek Yogurt, and 1 Tbsp. Jell-O Zero Sugar Cheesecake Instant Pudding Mix. Stir to combine. The mixture will be thick.
  3. Transfer the mixture to the bowl over the gingersnap cookie mix and smooth it out on top.
  4. Top cinnamon or pumpkin spice and enjoy!
