Italian Lunch Box

I was sort of slightly tasked with coming up with some fun and easy lunch(able) ideas recently. It seems like breakfast is pretty easy, dinner is almost always planned, it’s lunch that most people seem to have the greatest trouble with. I know that if I make up a few little lunch boxes ahead of time, that I’m a lot more likely to eat those, rather than going without or eating something I really shouldn’t.

For me, I like light lunches. Snackable lunches. Something finger-friendly that I can nom on while working at my desk. Right? Well, this Italian Lunch Box is just that! I made four of these boxes up in the matter for just a few minutes and they’re full of fun little bits that are as versatile as they are delicious!

The first thing I started this box out with was the meat. Salami is a general crowd pleaser, but to keep it lightened up I tossed some turkey in there too! After that, there’s the cheese. I went with a local made fresh mozzarella that is my Achilles’ heal. Some sliced local heirloom tomatoes, olives, and of course all the healthy fat of that avocado. Top it all off with some pesto and we’re in business!

Since I didn’t want the avocado to go bad at all through the week, I grabbed some small pre-portioned avocado packs. That’s all that’s in there - avocado! Not guacamole.

Eat this snack lunch as you desire. Piece by piece or even toss a few nut and seed crackers in there to make stackable Italian bites.

I chose to go with kalamata and garlic stuffed olives, but any olive that you enjoy would work out just as well. I really had to think long and hard over if I wanted the garlic stuffed or feta stuffed, but I think the garlic stuffed ones went better with the Italian theme!

Ingredients:
• 1/2 Oz. Deli Sliced Salami
• 1 Oz. Deli Sliced Turkey
• 1/2 Avocado
• 1/4 Medium Tomato, Sliced
• 1 Oz. Fresh Mozzarella
• 6 Olives (Kalamata & Stuffed are best!)
• 1 Tbsp. Light Pesto (Or make your own!)

Directions:
Place everything into a segment lunch box as desired.

Cover and store in the fridge to enjoy for 3-5 days for lunch!
