Italian Roll-Up Lunch

Well. Here we are again. Another day, another lunch box option! I told y’all I was going to be sure to have plenty of them for the coming School year. This Italian Roll-Up Lunch is another easy to put together lunch that any Italian food lover is sure to enjoy.

With three layers of Italian meat, provolone cheese and a boat load of veggies, who could turn this amazing little lunch down?

This lunch is basically an Italian sub without the bread. Instead, I added in a few parmesan cheese wisps. Don’t worry, you won’t miss the bread at all. The meat, cheese, fruits and veggies are more than enough to fill you up and keep you going through the day.

If you’re feeling extra spicy you can always add a touch of dijon or deli mustard to the Italian roll up. I found it to be un-needed, but it’s an option to have out there anyway!

This Italian Roll-Up Lunch makes four lunches, so one quick prepping session and you’ve got lunches for almost the whole week!

The Skinny:
Servings: 4 • Serving Size: 1 Prepared Lunch • Calories: 350 • Fat: 24 g • Saturated Fat: 10 g • Carb: 18 g • Fiber: 2 g • Protein: 18 g • Sugar: 13 g • Sodium: 1,452 mg

Ingredients:
Roll-Up:
• 8 Slices Salami
• 4 Large Pepperoni Slices
• 4 Slice Provolone Cheese
• 1/2 C. Shredded Lettuce
• 12-16 Slices Pepperoncinis
• 1 Whole Roasted Red Bell Pepper, Sliced Thin
• 4 Toothpicks

Lunch:
• 12 Olives
• 2 Cups Grapes
• 16 Parmesean Cheese Wisps

Directions:
Lay two slices of salami out and layer accordingly with the pepperoni slices as well.

Set one provolone cheese out in the middle.

Top the cheese with 2 Tbsp. shredded lettuce, 3-4 pepperoncinis and a few slices of roasted red bell pepper.

Roll it all up and pierce together with a toothpick.

Repeat for the remaining 3 Italian roll-ups.

Place one Italian roll-up into each lunch container along with 3 olives, 1/2 C. Grapes, and 4 parmesan cheese wisps.

Cover and place in the fridge to store until ready to enjoy!
