Lighter Egg-in-a-Basket

I'm taking a little break from my 'game day' inspired recipes today and enjoying a nice little light breakfast.

I've got to admit, breakfast is the hardest meal of the day for me. Somewhere between getting myself up and going and getting my little girl up and going... I more often than not either skip it all together or end up scarfing down the remains of whatever I made her that day.

One of my go to items when I'm rushing around is toast. It's quick. It's easy. And it's portable.

No fuss. No muss.

This morning I wanted to take it up a notch. I wanted some eggs, but also needed something that was a little more grab-and-go. Dashing around the downstairs with a fork in my mouth while I try and eat eggs... like a crazy person... is never a good idea.

While this isn't as quick as tossing the bread into the toaster, this is a really fast dish to cook up. I think it took me all of 10 minutes from start to finish. Including prep, photos and clean up time!

Plus, if you have any neat cookie cutters lying around - this makes for a super cute breakfast. And cute food is always a perk in my book.

Since Valentine's Day is just around the corner, I used one of my heart shaped cookie cutters.

Awe, I love hearts. Don't you?

This would be a great Valentine's Day 'breakfast in bed' idea to be served with some fresh fruit, coffee, and maybe even a mimosa!

The Skinny:
Servings: 1 • Size: 2 'Egg-in-a-Baskets' • Calories: 117 • Fat: 2.1 g • Carb: 20.2 g • Fiber: 4 g • Protein: 11.6 g • Sugar: 2.2 g • Sodium: 285 mg

Ingredients:
2 Slices Whole Wheat Bread (I used Nature's Own 100%)
1 Egg White
Sald & Pepper to Taste

Directions:

Lightly whisk your egg together with some salt and pepper to taste.

Use a cookie cutter of your choice to form a 'hole' in the middle of your slices bread.

As you can see I left about 1/2-1" around the hole.

Warm a skillet over medium heat and give it a light coat of non-stick cooking spray.

While the skillet is warming, give both sides of the bread slice a quick spray as well.

Place the bread into the pan.

Add half of the egg white to the center of the toast and allow to cook until the bread is browning on one side and the egg is starting to solidify.

Flip and continue to cook until the opposite side is browning and cooked.

I found that after my pan was to temperature, that I needed to turn the heat on my stove down to medium-low for the second pieces of toast.

Remove to a plate and repeat for the remaining slice of bread and cut out center pieces!

Serve warm with a little bit of fruit jam if desired!
