This tasty breakfast option combines the wholesome goodness of oats with the comforting taste of a freshly baked cookie. The blend of oats, milk, and brown sugar is combined to create a creamy, cookie-like oat batter. Then, it's baked to golden perfection, resulting in a warm, hearty dish.

You can make these ahead and store them in your fridge to reheat and eat through the week for breakfast. I like to serve mine with fresh fruit. It’s hearty and filling enough to get me through to lunch time, but a half portion would be a good dessert or snack alternative!

I like to make mine with an unsweet vanilla almond milk, but regular works just as well.

Blended oats made to taste like an oatmeal raisin cookie! A delicious breakfast that's warm and hearty.

Ingredients

  • 1 C. Dry Uncooked Oats
  • 1 Tsp. Baking Soda
  • 1 Banana
  • 1/2 C. Unsweetened Almond Milk
  • 2 Tbsp. Brown Sugar Substitute
  • 1 Tsp. Vanilla
  • 1/8 Tsp. Salt
  • 1/4 C. Raisins

Instructions

  1. Preheat the oven to 375 degrees F. and lightly coat the inside of a couple of ramekins with non-stick baking spray; set aside.
  2. In a blender, food processor, or the cup of an immersion blender, puree the 1 C. Dry Uncooked Oats, 1 Tsp. Baking Soda, 1 Banana, 1/2 C. Unsweetened Almond Milk, 2 Tbsp. Brown Sugar Substitute, 1 Tsp. Vanilla, and 1/8 Tsp. Salt together.
  3. Stir in the 1/4 C. Raisins.
  4. Divide evenly between the two ramekins and top with a few more raisins if desired.
  5. Place the dishes into the oven and bake for 25-30 minutes or until set and cooked through.
  6. Once done, remove from the oven and allow to cool slightly before enjoying right away!
