Simple Mango Salad + Lime Dressing

It may be cooling off outside finally, but that doesn’t mean that I don’t love salads any less. I was in need of a good ‘tropical’ style of salad to pair with something else that I’ve been working on for a couple of weeks now and this Simple Mango Salad + Lime Dressing slid into fill that role perfectly. This small and simple salad is deceiving. It’s delicate and delightful while being big and bold in flavors. And one of the best parts is that it only takes a handful of ingredients to make.

Being as it’s got just the limited ingredients, it doesn’t take long at all to make - including the homemade dressing which, let me just tell you, is SO good. That being said, there isn’t a whole lot here to substitute for lighter alternatives.

This salad ends up being vegetarian and gluten-free too! If you swapped the honey out for some agave instead, it would also be vegan! It starts out with baby spinach, and mango. Then you add on the homemade dressing and pico to boot.

I seriously love this salad and plan on keeping the recipe on hand for any sort of lightly tropical themed dishes I end up making in the future. This one is definitely a keeper! Be sure that you use FRESH lime juice and pick a perfectly ripe mango to make this salad perfect.

Simple Mango Salad + Lime Dressing

One of the most simple and yet tasty salads I've had with only 6 ingredients! Perfect to enjoy on its own for a light lunch or on the side as part of dinner.

Ingredients

  • 8 C. Fresh Baby Spinach
  • 1 Mango, Peeled & Sliced
  • 1/2 C. Fresh Pico
Lime Dressing
  • 2 Tbsp. Extra Virgin Olive Oil
  • 2 Limes, Juiced
  • 2 Tbsp. Honey
  • Salt & Pepper to Taste

Instructions

  1. Place 2 C. of baby spinach on each salad plate and divide the sliced mango evenly between them.
  2. Blend together the 2 Tbsp. Extra Virgin Olive Oil, the juice of 2 Limes, 2 Tbsp. Honey, and Salt & Pepper to Taste.
  3. Drizzle each salad with the dressing divided evenly.
  4. Enjoy right away with fresh pico!
