Spinach Stuffed Shells

A very veggie full stuffed shell. Loaded with lots of spinach, fresh basil, and ricotta cheese. Baked in your favorite spaghetti sauce!

Ingredients

  • 24 Oz. Spaghetti Sauce
  • 10 Oz. Frozen Chopped Spinach, Thawed & Squeezed
  • 1/2 C. Fat Free Ricotta
  • 1/3 C. Shredded Fat Free Mozzarella
  • 1 Garlic Clove
  • Fresh Basil Leaves
  • 2 Tbsp. Parmesan Cheese
  • 1/8 Tsp. Nutmeg
  • Salt & Pepper to Taste
  • 12 Jumbo Pasta Shells, Cooked

Instructions

  1. Preheat the oven to 375 degrees F. and spread about 1/2 of the spaghetti sauce into the bottom of a baking dish.
  2. In a large bowl, mix together the 10 Oz. Frozen Chopped Spinach, 1/2 C. Fat Free Ricotta, 1/3 C. Shredded Fat Free Mozzarella, 1 Garlic Clove, Fresh Basil Leaves, 2 Tbsp. Parmesan Cheese, 1/8 Tsp. Nutmeg, and Salt & Pepper to Taste.
  3. Stuff each shell with the spinach mixture.
  4. Place the stuffed shells into the sauce and add the remaining sauce to the dish.
  5. Cover with foil and place in the oven to bake for about 30 minutes or until hot and the sauce is bubbling.
  6. Once done, remove from the oven and enjoy right away!
