Whole Wheat Blueberry Oat Bars

These Whole Wheat Blueberry Oat Bars are a take on a raspberry version that I made a while back. Spring time always gets me into a lemon and blueberry mode, I’m not really sure why. Maybe it’s because blueberries are more in season and you can find packs of fresh big beautiful ones. Either way, these Whole Wheat Blueberry Oat Bars are easy to make and perfect for breakfast, brunch, or even dessert!

Unlike the blueberry oat bars I’ve made before, these ones are thick and hearty. Less of a snack and more along the lines of being used as part of meal, unless you cut each of the 16 bars in half again.

I love that these Whole Wheat Blueberry Oat Bars are made all in one pan and don’t require and cooking of the blueberries ahead of time. The most difficult part about these bars is giving them the time after being baked to chill and ‘set up’.

If you’re on a time crunch, you can always put the baking pan in the fridge for an hour or so to chill the bars more quickly!

Hearty and delicious blueberry bars that are made with whole wheat flour and a few other swaps to make one tasty breakfast bite!

Prep Time: 1 Hour + 10 Minutes • Cook Time: 35 Minutes

The Skinny:
Servings: 16 • Serving Size: 1 Bar • Calories: 348 • Fat: 19 g • Saturated Fat: 11 g • Carb: 42 g • Fiber: 4 g • Protein: 5 g • Sugar: 11 g • Sodium: 99 mg

Ingredients:
Raspberry:
• 1 (32 Oz.) Package of Frozen Blueberries
• 1/4 C. Sugar
• 1/4 C. Natural Sweetener
• 1 Tbsp. Corn Starch
• 1 Lemon, Juiced

Oat Crumble:
• 3 C. Rolled Oats
• 3 C. Whole Wheat White Flour
• 1 1/2 C. Melted Unsalted Butter
• 1 C. Natural Sweetener/Brown Sugar Bend
• 1 Tsp. Baking Powder
• 1/2 Tsp. Salt

Directions:
Place the 32 Oz. frozen blueberries into a large colander and lightly rinse with warm water. Then allow the liquid to drain and blueberries to thaw for about an hour or until softened.

Preheat the oven to 350 degrees F. and line a 9x13” baking dish with parchment paper; set aside.

Mix the blueberries with the 1/4 C. sugar, 1/4 C. sweetener. 1 Tbsp. corn starch, and lemon juice.

In a medium bowl, mix together the 3 C. oats, 3 C. flour, 1 1/2 C. butter, 1 C. brown sugar sweetener, 1 Tsp. baking powder, and 1/2 Tsp. salt together into a crumb-like mixture.

Press 2/3 of the mixture into the bottom of the prepared pan and bake for 10 minutes.

Remove the dish from the oven and spread the blueberries mixture over the top.

Sprinkle the remaining oat mixture over the top and place the dish back into the oven for another 25-30 minutes.

Once done, remove from the oven and allow the dish to chill for a few hours so that the bars can set up.

Cut into 16 bars and enjoy!
