Chicken Salad Lunch Box

I was asked for more snack, lunch, and meal prep box ideas - so I’ve been hard at work coming with a couple each week! This Chicken Salad Lunch Box has to be one of my favorites though. Then again, almost anything with chicken salad is a favorite of mine.

For this lunch box, I used the base for my standard chicken salad that I use in my stuffed tomatoes - and made a few adjustments to it according to what I happened to have on hand this time around. Namely swapping the cranberries for raisins, and using pecans for my nut of choice. Other than that, it’s pretty much same ole’ same ole’.

Who knew that such a delicious meal could be made with just 5 simple ingredients and 3 hours of hands-off cooking time? Well, this girl! As we’re getting closer to Summer here in Texas, I’m starting to already use my stove and oven less and less. It’s freaking HOT here already, y’all! Who knew that making your own homemade peanut butter cups could be so easy?!

Simple Snack & Travel Boxes

The third and last box is the veggie snack box, which is full of fresh veggies including carrots, tomatoes, sugar snap peas, and zucchini. That’s all paired with a hummus. I used a local sunflower seed hummus, because it’s one of my new obsessions.Well, a lot of traveling happened this weekend and being as I’m trying to eat a more consciously while traveling, I thought I would try my hand at some travel-friendly snack boxes! Naked Beef Enchiladas

This certainly isn’t the first time that I’ve stripped my enchiladas down into their pure and naked forms. The last time I stuck with a veggie and cheese enchilada, but this time I wanted to make one that was more Tex-Mex inspired with a bunch of cheese and ground beef to pair with the staple red enchilada sauce.

Trust me when I say that you won’t miss the tortilla in these enchiladas. They are every bit as tasty and full of Tex-Mex flavor as any other enchilada you’ll come across. Plus, one of my favorite parts about these enchiladas is that you can make them well ahead of time to have prepared and ready to toss in the oven for dinner at a moments notice….
