Buffalo Chicken Stuffed Bell Peppers

These Buffalo Chicken Stuffed Bell Peppers are where it’s at! They’re low carb and gluten free while being absolutely delicious and easy to make too. If you love buffalo chicken, then these are the stuffed peppers for you. I served mine with a side of celery and carrots with some light blue cheese dip, but it would also be good with some rice or even a side salad.

I lightened these peppers up by swapping in some greek yogurt and light blue cheese dressing in place of mayo and sour cream. This Japanese Egg Salad is made with just 4-5 ingredients and takes hardly any time at all to make and the end result is creamy, light, and delicious! So what makes this egg salad Japanese? The secret is in the mayonnaise! This egg salad uses kewpie, which is the Japanese version of mayonnaise. But, don’t worry! You can find it at most grocery stores.

American mayonnaise is made with whole eggs and white vinegar. Kewpie is made with egg yolks and rice vinegar or apple cider vinegar. Kewpie eggs up being sweeter and has less tang. It’s also a lot richer and creamer too!…

This Mediterranean Feta & Lemon Chicken is packed full of flavor and it’s all to do with the lovely marinade that it sits in for just thirty minutes. Only good, clean, and fresh ingredients go into it too. I don’t know about anyone else, but I can’t say no to a good feta cheese dish anyway and this chicken is just about as good as it gets.

This Cheesy Cauliflower Pizza Casserole is the best of both the world of pizza and the world of eating better. It’s cheesy, saucy, easy to make, and delicious too! Another good part is that you don’t need many ingredients to make this casserole either.

You can also customize this casserole to suit your specific pizza tastes. I went with turkey pepperoni since it’s just as good as any pepperoni but has fewer calories, but you could also go with jalapeño, olives, sausage, etc…
