Guacamole Wonton Bites

If you haven't noticed, I've been a little avocado obsessed lately. And these guacamole wonton bites are no exception. While playing around with wonton wrappers the past couple of weeks, I thought it would be fun to stuff them with something other than the usual. So, I decided to do a little bit of fusion.

I have come to find that wonton skins are the perfect vehicle. They are light and crispy... sort of like a tortilla or a chip, but much more versatile. These handheld little bites of awesome are full of flavor, and it all starts out with a super simple homemade guacamole...

Cauliflower 'Fried Rice'

This week I've decided I'm going to start eating a more plant based diet. It's something that my subconscious has been slowly seeming to lead up to for the past months, and honestly I hadn't really noticed until I sat down to write out my weekly meal plan for myself last week.

I think what really got my wheels spinning on 'plant based' meals was a quote that I heard a long time ago.

Whole Wheat Stout & Irish Cheddar Pizza

With St. Patrick's Day just around the corner, you know I'm going to start getting in on the Irish grub, just like I always do. I've made some pretty tasty stuff before, mostly some of the classics and staples that I came to know and love.

This time though, I wanted to step outside of the box a bit. So, I decided to load a pizza up with some of my favorite Irish flavors. Namely Irish cheddar and a dark stout beer. I also had to get my fill of green in there, because you know... St. Patrick's Day is all about the green. ...And beer.

Grapefruit & Avocado Salad with White Wine Vinaigrette

So, last week I had posted a picture of this fabulous little lunch/snack that I had for myself, and seeing as it managed to grab quite a bit of attention I thought I would do something else similar this week. Though I still might share the original soon too!

Grapefruit is very much so in season here in Texas right now, and as such, I wanted to make full use of it since it's one of my most favorite circus fruits. Vegan Spaghetti Squash Enchilada Bowl

Lately I have been trying to be a lot more mindful, especially with my time. It seems as if the older I get, the less minutes and hours there are in my day. Life has been whipping my tail lately and it all seems like such a blur. So, to help slow things down I decided to make this super easy vegan squash bowl. It's what 'Make Me Mindful' means to me right now.

I've noticed a lot of times that I tend to make vegan cooking a lot more of a task than it needs to be. Sometimes when it comes to food, the simpler - the better. Vegetable & Stars Soup

So, last week I was in the midst of what had to have been one of the worst colds of my life. I kid you not. This cold was fierce. It came with aches, the worst sinus pressure I've had, and was just all around bad news. Thankfully this week, I'm finally on the mend after the two week long fiasco. Unfortunately, it seems that my little princess has taken over where I left off.
