Skinny 'Fried' Green Tomato BLT

I know, I've been talking a lot lately about my local produce box that I've been getting weekly. But, I just have so much fun with it. I get a lot of fresh ingredients that I normally wouldn't think to cook with, so it really stretches my cooking muscles and pushes me outside my usual box.

This week I got some lovely green tomatoes. Green tomatoes? What's that? Basically it's an unripe tomato. Nothing fancy here. They are firmer and more tart than their ripened brethren. They are definitely one of those simple things that you just can't seem to find at the grocery store often (if ever at all.) Needless to say, I was pretty excited to get my hands on these green beauties finally!

Now, what do you do with unripe tomatoes? Well, in the south... we fry them. Since I don't like to fry anything though, I'm doing a lighter take on that. After all, I've made Faux Fried Tomatoes before; a great starting point...

It's beginning to feel a lot like summer around here and I'm more ready than ever to fire up the BBQ grill outside to cook up some festive summer inspired foods. This spicy Mustard & Jalapeño Grilled Chicken Sandwich is the perfect send off into BBQing season.

The mustard marinade and sauce used on this chicken is fantastic. It's sweet, it's spicy, and it's full of flavor! Plus, it's super easy to toss together in the midst of a chaotic morning or on a lunch break even to leave your chicken marinating while you go about the rest of your day. That's one of my favorite things about mustard, you don't have to do much to it to get something amazing in the end when being used as a marinade or sauce...

Healthified Turkey Cuban Sandwich

I'm always on the lookout around Thanksgiving for recipes that I can use up my leftover turkey, and a lighter cuban sandwich is a perfect way to do just that! Don't know what a cuban sandwich is? Well, it's a wonderfully tasty little sandwich that is generally made with roasted pork, ham, swiss cheese, pickles and mustard on some rather hardy cuban bread. Supposedly the sandwich originated in one of my most favorite places in the world - Key West, Florida!

Since, once again this year, I will not be making my traditional Thanksgiving meal, I've been doing my part it making turkey ahead of time; as if I need to get my quota for eating turkey in before the year is up. Then again, I tend to cook with turkey all year long since it's one of my favorite lean meats...

The mustard BBQ sauce has quite a kick to it on it's own, but when you combine it with the natural sweetness from the pork... it's a beautiful, beautiful thing.

Skinny Jalapeño Pimento Cheese

I know, I know... there's a lot of people out there (mostly in the northern states), that don't have any idea what pimento cheese is - nor what they are missing out on with it not being in their lives!
