5 Ingredient Thai Butternut Squash Soup (Crock Pot)

So about a week ago I got my hands on the biggest butternut squash that I've ever seen in my life. The best part about it was that it was from a local Texas farm, which you know I'm all about. I had already used the squash in two previous meals this week and was racking my brain to come up with a third and final use so that I could get it all eaten up before the weekend. Because, you know, there is a lot of Easter happenings and I couldn't let this beauty go to waste.

Vegetable & Stars Soup

So, last week I was in the midst of what had to have been one of the worst colds of my life. I kid you not. This cold was fierce. It came with aches, the worst sinus pressure I've had, and was just all around bad news. Thankfully this week, I'm finally on the mend after the two week long fiasco. 'Leftover' Turkey Wonton Soup

What can I say? I absolutely love to come up with fun and inspired new ways to use up leftovers, especially Holiday ones! Like I've said before, their's just something that's gratifying about being able to create a new dish from leftover parts of another meal.

I've been working pretty hard with racking my brain and trying to come up with interesting twists that were somewhat outside the box; repurposing my holiday leftovers in a way that maybe isn't something most would think of. My inspiration comes in many forms. This time around it was my wonderful cry-haired bombshell of a mother.

Skinny Cheeseburger Soup

I must admit that I have been in total soup mode lately. I think it's something that happens to me every fall once it finally starts to cool off here in Texas. Of course, it doesn't help that there's been a head cold running around the house for a couple of weeks now too.

Thankfully, we're going to even be getting down into the 70's during the days this week along with some chances for rain, whoohoo! Just in time too. There's a fall festival at my daughter's school this weekend and I'm ready to get into the spirit of Halloween all the more. Pun totally intended.

One of our traditional family favorites no matter the time of year is definitely cheeseburgers. Generally, if we can't think of anything else to grill/cook we end up with burgers and hotdogs. Today I'm taking this delicious staple and transforming it into a better-for-you hearty soup!...

Healthified Pumpkin Curry Ramen

I know that I created a ramen recipe just a week or two ago, but I promise that this one is totally different and unique in it's own way from any traditional one. This yummy ramen is full of all those warm fall flavors that we all know and love; pumpkin, ginger, and plenty of spice.

Some of you might be making a face by now, I know. Pumpkin? In ramen? I promise you (just as I promised my mom), this stuff is great! The pumpkin flavor is very light and definitely gives this ramen a creamier feel without being weighed down with heavy creams and the like.

Plus, look at that gorgeous color? Talk about eating the rainbow...
