Easy Ratatouille & Cheesy Parmesan Polenta (Crock Pot)

So, I've been on the hunt for a good way of making ratatouille lately. I had tried it many many years back when I was a brand new mother. But, it didn't turn out at all the way that I had wanted. It soured my opinion on ratatouille and eggplant for years to come. Eggplant is not my most favorite vegetable, but ratatouille is one way that I will eat it.

I think that I'll eat almost anything if it's got pasta sauce and/or zucchini involved.

A few weeks back, I had tried this recipe out while my grandmother was still visiting. It got rave reviews from around the table. As it turns out, I got an eggplant and an acorn squash in my most recent local produce box, and knew exactly what I wanted to do with it. Another ratatouille!...

Skinny Mexican Style Caprese Salad

I've been in love with caprese salads for a long time now. I think that my love of them actually started some years ago when I worked as a waitress in a newly opening restaurant when I was visiting home for the summer one year from college. It was a horrific experience, but only because I am not good at the whole waitressing thing. That job takes a very skilled and specific type of person to do properly. And I am not skilled or specific to customer servicing!

It did give me an entirely new perspective though on restaurants and I have always had another level or respect for those that wait tables.

Anyway, the restaurant had a caprese salad and I felt like eating vegetarian that day; plus, I mean... I got half off meals and they had great food there so I was pretty set on trying almost everything on the menu. It was love at first bite...

Tomato Cobbler

I know what you're thinking. Tomato Cobbler?

Yes, and yes.

Lately, I've seen a lot of savory takes on treats that most would consider desserts or sweets. So, this is my savory take on a cobbler. I mean... a tomato is technically a fruit anyway. Right? Right!

"Knowledge is knowing a tomato is a fruit. Wisdom is not putting it into a fruit salad."

Well, at least I'm not putting the tomatoes into a fruit salad.

Tomatoes are one of my favorite things. I'm pretty sure there are not many circumstances to which I would turn one down. Pie, soup, ketchup, baked, raw, stuffed... I think I've had tomatoes in just about every manner in which you could eat possibly eat them...

Who watches Chopped? I do, I do! It's one of my most favorite shows. I love to watch the cooks on there immediately having to think on their feet with a basket of rather random and sometimes even off-putting ingredients.

Skinny Faux 'Fried' Tomatoes

I'm a southern girl. You know, the born in Texas sort... It's not an uncommon place to find fried anything all around you here in the Lone Star State. I mean, have you been to our State Fair? Eek gads, man! Even so, I've got to be honest here. The only thing I care for at all that is fried would be french fries, pickles, and of course... tomatoes!

As you can imagine, fried tomatoes (especially green ones) were once a common place and a staple to southern food. Now though? You're hard pressed to find a single place in a giant city that fries them anymore.

A couple months back I was venturing out and trying a newly opened movie theater over closer to my mother's end of the world here in Austin. I don't know about you, but from what I remember, back when I was a young girl your options at movie theaters were fairly limited. I'm talking hot dogs, pop corn, soda, and an array over overly priced candies. In today's world though, the most of the movie theaters that I go to are all about beer, wine, and gourmet foods! This particular place was no different, featuring an amazing wine selection and beautiful food options that put those old-time hot dogs to bed...

Skinny B.L.T. Soup

I'm busy in the kitchen this week as I prepare for Thanksgiving so... I needed something super simple to make myself for lunch that I could then enjoy for a few days after the one preparation. I've been craving a nice BLT sandwich lately, but I'm also trying to stay away from gluten a little bit too. So, with bread out of mind (and  BLT Lettuce Wraps already done), I started to think about how else I could enjoy the flavors of a BLT in a different form. Ta-da! BLT soup.

This soup is pretty amazing. When topped with the shredded lettuce, the greens wilt just enough to soften but still retain a bit of texture; adding another dimension to an otherwise rather smooth soup. And of course, the bacon adds all the awesome. How can you go wrong with anything involving bacon? You can't!...
