Skinny Hawaiian Crunch Cake

Every year at the end of summer my mom has had a Luau, a tradition that has been going on since she moved here to Austin; so let's say this was the fourth year. Each time the Luau gets bigger and better than the year before, always inviting new and old neighbors or friends. The Luau is done sort of in pot-luck style with my mom and I making a few main things that go along with the theme while guests bring their additions to the spread.

There are a few select things that I have perfected over time and made each year for this Luau. A few things have changed but for the most part it all stays the same; a pineapple salsa, Hawaiian queso, and some sort of dessert...

I'm a southern girl, so cobbler is in my blood and I'm pretty sure that cast iron is part of my very fiber. What's funny is that I actually got my current cast iron, which belonged to my parents, by total accident; it was left over at my house and they needed one so they were forced to buy a new one and I got to keep the one left behind. Score!

There isn't much better than a pre-used and well seasoned cast iron, any southern girl will tell you that! Okay, except maybe cobbler. Cobbler is greater than cast iron. It actually seems like one of the first things that the grill master of the family makes in his new cast iron products, whether it's a skillet or a dutch oven...

Skinny Vanilla Cake Pops

Who doesn't love these sweet little treats on a stick?

Seriously.

I'm pretty sure that almost everyone had their first taste of a cake pop at Starbucks. Yeah, you know the ones I'm talking about too. The pinkalicious birthday cake flavor of pure heaven on a stick... and hell on your thighs.

I've attempted to make any versions of these over the years, and I will say that they are quite easy to make, but also very time consuming. It's definitely a labor of love though; mindless work that takes just about forever to do with a phenomenal end result.

And what better to devote your labor of love to other than your adorable child, right? My little girl is absolutely stuck on cake pops, so I figured it was long since time to get another of her favorites out there...

Skinny Holiday Confetti Cake Mix Cookies

Now that Thanksgiving has passed, I'm getting into the holiday spirit with some festive, fun, and healthier takes on some of our favorite Christmas treats. Since we had a birthday this week, I thought it would be fitting to bake up some confetti cake mix cookies, but with holiday colors, of course!

And by birthday... I mean for my kitty-fur-baby-boy, Orion.

My four year old was pretty adamant on doing something for our kitty's first birthday. So, confetti cookies for all! Well, except for the cat, obviously. He got some new toys to play with while my daughter and I baked these cookies up...

Chickpea & Quinoa Cakes

So, I'm not really a huge fan of seafood. Okay... and by that... I mean I absolutely cannot and will not eat any sort of seafood. I've been that way for my entire life, even after living on the Oregon coast for 5 years! It has nothing to do with taste or texture, because honestly... I've had very few tastes of seafood. It is completely a mental block.

My mom says that if I would just try seafood, I would love it. Hah. Good luck getting me to try any! With all of that being said, I can't help but day dream and wonder when I see a beautiful fresh seafood dish. One thing I think I would enjoy is a crab cake.

So, this is basically my vegetarian... vegan... paleo take on a crab cake!

Skinny Black Forest "Better Than Sex" Cake

Yeah. I said it. BETTER THAN SEX Cake.

I can't tell you how much it irritates me when people dance around the true title of a poke cake recipe. 'Better than... Cake'? Better than what? Better than candy? Better than a new pair of shoes? No. It's BETTER THAN SEX. Let's get it right. BETTER THAN SEX.

What can I say? I love a good poke cake. They are the perfect way to mask the fact that a cake is in fact... skinny! How's that? Because with the pudding left to soak into the cake, it gives the illusion of a decadent richness that you wouldn't expect with a lighter variation of any dessert. It makes the cake seem a lot more naughty than it actually is...
