The very first time that I had a pumpkin cream cheese roll, it was sometime in high school when my mom and I had purchased one from a local lady that made them from scratch around the holidays to sell for a little bonus side money.

It was one of the best things that I had ever eaten.

Whole Wheat Lasagna Roll-Ups

Yes, that's right... you can have your lasagna and eat it too!

What's better is now you don't have to feel guilty about indulging in it anymore. Most places I looked, a typical serving of one lasagna roll-up was anywhere between 350-550 calories. What?! That's madness!

If you're going to have pasta, you better at least do it right and make those carbs and calories well worth it. With this lightened up version of lasagna roll-ups, you won't feel like you're missing out on anything and that's because you're not!

These noodles are loaded with cheesy spinach goodness. They're rich, decadent, full of flavor, and even more full of vegetables...

Skinny Pesto & Mozzarella Stuffed Chicken

How could anyone resist a stuffed chicken breast? Well, certainly not me! Especially when it's stuffed with my favorite pesto and fresh melty mozzarella.

Yes. I'm allowed to say 'melty' here because it's oh-so-fitting.

A few weeks ago I had this amazingly delicious caprese style salad with smoked chicken breast and some sort of lemon pesto involved. I sort of based this stuffed chicken off that idea by adding some lemon zest into the breading mix.

The addition of the lemon definitely adds a new dimension of flavor to the chicken here, so you'll want to be sure not to leave that out!...

Skinny Baked Bacon Cheeseburger Egg Rolls

This is exactly the sort of fun thing that happens when I cook from my pantry.

I make a set meal plan every week for breakfast, lunch, and dinners. But somehow... by the end of the week, plans have inevitably changed. After a few weeks I end up with a handful of odds and ends from meals that either never happened or were converted into something else for whatever reason.

At any rate, I had a full pound of burger meat in my freezer that needed to have something done with it, and no buns. I also had some egg roll wrappers that I had intended for another use, but somehow managed to remain sitting in my fridge. I also had two lonely slices of cooked reduced sodium bacon sitting aside as leftovers from breakfast.

What's a girl to do...?...

Skinny Maple Bacon Cinnamon Rolls

And so the blissful week of bacon inspired recipes continues!

These cinnamon rolls are the perfect morning treat. Reminiscent of pigs-in-a-blanket or pancakes with bacon. The house smelled absolutely wonderful while these were in the oven.

If you're not all about bacon, and I know that there are actually a few of you out there, you can definitely substitute the bacon for another ingredient such as dried fruit or nuts. Yum!...
